Ingredientes

  • 3 lb Chuck with bone
  • 2 x (16 oz) cans Diced beets with juice
  • 2 med Potatoes, diced
  • 2 x Carrots, diced
  • 1 lrg Onion, diced
  • 1/2 c. Cooked white beans
  • 2 clv garlic, crushed
  • 2 Tbsp. Salt
  • 1/2 tsp Pepper
  • 2 Tbsp. Flour mixed with small amount cool water
  • 1 c. Canned tomatoes
  • 1/2 head Cabbage, minced
  • 1 Tbsp. Parsley, minced
  • 3 Tbsp. Lemon juice
  • 3 Tbsp. Sugar

Direcciones

  1. First sear and brown meat in large pot. Add in 5 qts water; bring to boil, and cook covered over low heat for 2 1/2 hrs. When meat is cooked, add in the following ingrediants: diced beets with juice, potatoes, onions, carrots, and cabbage. Cook for 20 min. Add in beans, tomatoes, garlic, pepper, salt, parsley, sugar, vinegar, thickened flour; cook another 20 min. Taste for seasoning. Serve borscht with bowl of lowfat sour cream on side.
  2. Each serving should have a piece of meat cut into it. This soup should be prepared in advance, refrigerated, and then reheated.
