%3C/p%3E%3Cp%3EOne%20of%20our%20favourite%20dinners%20was%20this%20frittata%20recipe,%20slightly%20adapted%20from%20Nigella%20Lawson%E2%80%99s%20recipe%20for%20%E2%80%98Mortadella%20and%20Mozzarella%20frittata%E2%80%99.%20Our%20adaptation%20was%20the%20fact%20we%20couldn%E2%80%99t%20get%20any%20Mortadella,%20and%20therefore%20substituted%20for%20the%20salami.%20The%20recipe%20is%20taken%20from%20her%20latest%20book%20%E2%80%98Kitchen%E2%80%99%20which%20I%20treated%20myself%20to%20at%20Christmas.%20I%20really%20love%20this%20book.%20Every%20time%20I%20get%20close%20to%20putting%20it%20in%20the%20bookshelf,%20it%20mysteriously%20comes%20back%20out%20again!%20Both%20for%20inspiration%20and%20the%20recipes%20I%E2%80%99ve%20cooked%20so%20far,%20it%E2%80%99s%20a%20book%20I%20can%20honestly%20recommend,%20providing%20of%20course%20everyday%20cookery%20floats%20your%20boat.%20Definitely%20a%20keeper.%3C/p%3E%3Cp%3EAnyway,%20enough%20of%20me%20rambling,%20it%E2%80%99s%20a%20very%20easy%20and%20simple%20dish%20to%20make,%20and%20whilst%20it%20was%20lovely%20served%20hot%20for%20our%20dinner,%20it%20was%20also%20equally%20good%20served%20cold%20the%20next%20day.%20Best%20served%20on%20a%20nice,%20warm%20evening%20though,%20not%20the%20rainy%20grey%20night%20we%20made%20this%20on!%3C/p%3E%3Cp%3EYou%20will%20need%20a%2025cm%20wide%20frying/%20saut%C3%A9%20pan,%20suitable%20for%20both%20hob%20and%20going%20under%20the%20grill.%3C/p%3E%3Cp%3EServes%204-8%20(I%E2%80%99m%20guessing%208%20if%20you%20are%20serving%20children,%20we%20easily%20ate%20half%20of%20it%20between%20the%20two%20of%20us..)%3C/p%3E%3Cp%3ESuper%20easy:%3C/p%3E%3Cp%3EPre-heat%20the%20grill,%20nice%20and%20hot%3C/p%3E%3Cp%3EBeat%20the%20eggs%20in%20a%20bowl,%20add%20the%20meat,%20cheese,%20parsley%20and%20season.%3C/p%3E%3Cp%3EGently%20melt%20the%20butter%20with%20the%20oil,%20in%20the%20frying%20pan,%20add%20the%20beaten%20mixture%20%E2%80%93%20do%20not%20stir%20%E2%80%93%20cook%20for%20about%205%20minutes%20or%20until%20set,%20and%20golden%20(ours%20was%20more%20nearer%2010%20minutes).%20Transfer%20under%20the%20grill,%20and%20cook%20until%20all%20golden%20brown%20and%20puffed%20up.%20Allow%20to%20cool%20for%20a%20few%20minutes%20in%20the%20pan,%20then%20gently%20ease%20out%20onto%20your%20serving%20plate,%20I%20found%20a%20silicon%20spatula%20very%20useful%20for%20this%20part!%3C/p%3E%3Cp%3EServe%20hot%20with%20some%20nice%20green%20vegetable,%20such%20as%20broccoli%20or%20cold%20with%20a%20picnic%20and%20salad.%3C/p%3E%3Cp%3EI%20am%20very%20tempted%20to%20add%20more%20cheese%20next%20time%20but%20then%20it%20becomes%20not%20so%20light%20and%20pretending%20it%E2%80%99s%20a%20healthy%20dinner..%3C/p%3E){kind=link}
