Salmon Potato Cakes With Roasted Tomato Mayonnaise

Ingredientes

  • 2 lb skinless salmon fillet
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 tsp cayenne pepper
  • 1/2 c. dry white wine
  • 1 x onion finely minced
  • 2 tsp chopped garlic
  • 1 1/2 c. chilled mashed potatoes
  • 1/4 c. minced fresh herbs
  •     (parsley, basil, and tarragon)
  •     Bread crumbs as needed
  •     Vegetable oil as needed
  •     Butter as needed
  • 1 1/2 c. homemade or possibly prepared mayonnaise
  • 8 x oven roasted plum tomatoes
  • 3 Tbsp. ketchup
  • 1 Tbsp. Dijon mustard
  • 1 tsp paprika
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Direcciones

  1. Season fillets with salt, pepper and cayenne.
  2. In a baking dish, place seasoned fish with wine, onions and garlic and bake in a preheated 350 degree oven for about 7 min or possibly till fish is cooked through.
  3. When fish is completely cooled, flake. Mix the flaked salmon with potatoes and herbs. Roll 6-oz cakes in bread crumbs. In a saute/fry pan, heat 1 Tbsp. oil and 1 Tbsp. butter. When warm, saute/fry cakes so which the bread crumbs toast. Cook on both sides and place on sheet tray.
  4. After all salmon-potato cakes are toasted, place sheet tray in oven for 10 min to heat cakes through.
  5. In a blender or possibly food processor combine, mayonnaise, tomatoes, ketchup, Dijon mustard, paprika; season, to taste, with salt and pepper.
