Receta Salmon Potato Cakes With Roasted Tomato Mayonnaise

Ingredientes
- 2 lb skinless salmon fillet
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 1 tsp cayenne pepper
- 1/2 c. dry white wine
- 1 x onion finely minced
- 2 tsp chopped garlic
- 1Â 1/2 c. chilled mashed potatoes
- 1/4 c. minced fresh herbs
- Â Â (parsley, basil, and tarragon)
- Â Â Bread crumbs as needed
- Â Â Vegetable oil as needed
- Â Â Butter as needed
- 1Â 1/2 c. homemade or possibly prepared mayonnaise
- 8 x oven roasted plum tomatoes
- 3 Tbsp. ketchup
- 1 Tbsp. Dijon mustard
- 1 tsp paprika
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste

- Season fillets with salt, pepper and cayenne.
- In a baking dish, place seasoned fish with wine, onions and garlic and bake in a preheated 350 degree oven for about 7 min or possibly till fish is cooked through.
- When fish is completely cooled, flake. Mix the flaked salmon with potatoes and herbs. Roll 6-oz cakes in bread crumbs. In a saute/fry pan, heat 1 Tbsp. oil and 1 Tbsp. butter. When warm, saute/fry cakes so which the bread crumbs toast. Cook on both sides and place on sheet tray.
- After all salmon-potato cakes are toasted, place sheet tray in oven for 10 min to heat cakes through.
- In a blender or possibly food processor combine, mayonnaise, tomatoes, ketchup, Dijon mustard, paprika; season, to taste, with salt and pepper.
