Salmon Rolls With Cheese Sauce

Ingredientes

  • 6 x 4-6 ounce. salmon fillets
  • 3 Tbsp. Butter
  • 3 Tbsp. Flour
  • 1 c. Cheddar cheese, grated
  • 1 1/2 c. Light cream
  • 1 Tbsp. Sherry, sweet
  • 1 1/2 tsp Salt
  • 1/2 c. Onion, grated
  • 1 Tbsp. Lemon juice
  • 1/2 tsp White pepper
  • 1/2 c. Melted butter

Direcciones

  1. Heat 3 Tbsp. of butter in a skillet. Fold in flour till smooth.
  2. Gradually add in the cream, stirring till it reaches the boiling point. Cook over a low heat 5 min. Add in the cheese, sherry and 1/2 ts of salt; cook till the cheese melts. Remove from the stove.
  3. Roll up salmon fillets, fasten with toothpicks, and arrange them on an elevated rack in a greased baking dish. Sprinkle with onions, lemon juice, pepper and remaining salt. Pour 1/2 c. of melted butter over top of the six fillets.
  4. Bake for 35 min in a 400 degree oven. Pour the cheese sauce over the fish and place under the broiler till the cheese is lightly browned.
  5. Serve with home fried potatoes and a tossed salad with fresh cherry tomatoes.
  6. Serves 6.
