- Preheat oven to 190C/375F/Gas Mark 5.Place salmon on foil on a baking sheet sprinkle with lemon juice dill and pepper wrap loosely and bake for 25 min.
- Allow to cold.
- Make the dressing: mix ingredients and season.
- Skin salmon and flake flesh over the watercress cucumber spring onions and dill in a shallow serving bowl.
- Toss lightly and drizzle over the dressing.
- Serves 4
