%20and%20pulse%20just%20until%20blended.%3C/p%3E%3Cp%3E2.%20In%20large%20bowl,%20combine%20all%20salad%20ingredients%20except%20raspberries.%20Drizzle%20with%20dressing;%20toss%20gently%20to%20coat.%20Gently%20fold%20in%20raspberries.%3C/p%3E%3Cp%3EServing%20Suggestions:%3C/p%3E%3Cp%3EServe%20on%20individual%20salad%20plates%20or%20in%20Tortilla%20Salad%20Shells.%3C/p%3E%3Cp%3ETip:%20The%20dressing%20can%20be%20made%20ahead%20of%20time%20and%20refrigerated%20for%20several%20hours%20or%20overnight.%3C/p%3E%3Cp%3E1/4%20cup%20or%20so%20chopped%20shallot.%20This%20shows%20a%20scant%201/3%20cup.%3C/p%3E%3Cp%3EThis%20makes%20about%20one%20tablespoon,%20chopped.%3C/p%3E%3Cp%3EI%20made%20the%20salad%20a%20few%20hours%20before%20heading%20out%20to%20a%20Linden%20Tree%20Coffeehouse*%20volunteer%20appreciation%20party%20on%20June%2018%20and%20decided%20to%20bring%20it%20with%20me%20to%20get%20additional%20opinions%20beyond%20Steve%E2%80%99s%20and%20mine.%20%20WELL!!!!%20%20It%20was%20a%20resounding%20success!%20%20So%20much%20so%20that%20Steve%20didn%E2%80%99t%20get%20a%20chance%20to%20try%20it%20that%20evening.%20So,%20I%20made%20it%20again%20the%20next%20day.%3C/p%3E%3Cp%3EUpon%20arriving%20home%20with%20more%20raspberries%20and%20salmon,%20I%20realized%20that%20I%20had%20forgotten%20nectarines,%20although,%20the%20chances%20of%20getting%20ripe%20ones%20were%20small%20anyway.%20%20In%20fact,%20after%20receiving%20the%20recipe%20and%20purchasing%20the%20ingredients%20mid%20week,%20%20it%20was%20not%20until%20Friday%20that%20the%20nectarines%20were%20ripe%20enough%20to%20use.%3C/p%3E%3Cp%3ESo,%20there%20I%20was,%20and%20I%20didn%E2%80%99t%20want%20to%20got%20back%20to%20the%20store%20again,%20anyway.%20%20But,%20since%20the%20dressing%20contains%20lemon%20juice,%20I%20suspected%20that%20one%20could%20substitute%20with%20an%20orange.%20%20Just%20to%20make%20sure,%20I%20searched%20online%20for%20recipes%20with%20salmon%20and%20orange.%20%20That%E2%80%99s%20when%20I%20found%20on%20very%20similar%20to%20the%20recipe%20Marcia%20sent%20me%20that%20had%20honey%20instead%20of%20nuts%20in%20the%20dressing,%20either%20one%20a%20thickening%20source,%20I%20am%20guessing.%20%20Just%20use%20honey%20if%20you%20want%20it%20more%20sweet%20or%20don%E2%80%99t%20have%20pecans%20or%20walnuts%20on%20hand.%3C/p%3E%3Cp%3EThe%20Dressing%20-%20with%20nuts,%20not%20honey%3C/p%3E%3Cp%3EAnd,%20speaking%20of%20substitutes,%20online%20research%20told%20me%20that%20walnuts%20are%20a%20good%20substitute%20for%20pecans,%20so,%20since%20walnuts%20were%20what%20I%20had,%20that%20is%20what%20I%20used.%20%20And,%20I%20suppose%20you%20could%20use%20onion%20instead%20of%20shallot,%20but%20I%20wouldn%E2%80%99t%20recommend%20it%20unless%20you%20used%20Vidalia%20or%20other%20sweet%20type%20of%20onion.%20%20But,%20frankly,%20I%20am%20a%20huge%20fan%20of%20shallots%20and%20always%20make%20sure%20to%20have%20plenty%20on%20hand.%3C/p%3E%3Cp%3EBottom%20line%20is%20that%20this%20salad%20is%20excellent%20with%20either%20nectarines%20or%20fresh%20chunks%20of%20orange.%20%20I%20saw%20recipes%20with%20salmon,%20that%20call%20for%20canned%20manderin%20orange%20pieces,%20also,%20so%20that%20would%20be%20another%20option.%3C/p%3E%3Cp%3Epre%20-%20dressing%3C/p%3E%3Cp%3ENectarine%20version%20-%20with%20dressing%3C/p%3E%3Cp%3Ewith%20chunks%20of%20orange,%20dressed%3C/p%3E%3Cp%3EA%20few%20more%20notes:%20%20I%20used%20mostly%20romaine%20lettuce,%20because%20that%20is%20what%20I%20had%20in%20my%20fridge.%20%20I%20did%20supplement%20it%20with%20greens%20from%20my%20box%20garden,%20though.%3C/p%3E%3Cp%3ESome%20kind%20of%20lettuce%20and%20arugula%3C/p%3E%3Cp%3EI%20am%20pretty%20amazed%20by%20how%20prolific%20this%20lettuce%20is.%20%20I%20picked%207%20or%20eight%20leaves%20total%20two%20days%20in%20a%20row%20and%20it%20seems%20to%20grow%20back%20overnight.%20%20Now%20I%20need%20to%20really%20leave%20it%20alone%20so%20it%20has%20a%20chance%20to%20really%20get%20going!%3C/p%3E%3Cp%3EAnd,%20the%20final%20note:%20%20Rather%20than%20used%20canned%20salmon,%20Marcia%20bought%20fresh%20salmon%20and%20cooked%20it%20herself,%20which%20was%20an%20excellent%20touch%20to%20her%20version.%20%20And,%20I%E2%80%99d%20recommend%20doing%20that%20if%20you%20have%20the%20time%20and%20can%20find%20some%20good%20fresh%20salmon.%20%20But,%20I%20do%20think,%20flavor-wise,%20the%20canned%20works%20quite%20well,%20since%20there%20are%20so%20many%20other%20flavors%20going%20on%20in%20this%20dish.%3C/p%3E%3Cp%3EBut,%20whatever%20you%20do,%20I%20recommend%20trying%20this%20recipe.%20%20It%20is%20especially%20good%20for%20potlucks%20because,%20along%20with%20tasting%20great,%20the%20unexpected%20mix%20of%20ingredients%20is%20a%20great%20conversation%20starter.%3C/p%3E%3Cp%3E*%20Along%20with%20a%20fun%20jam%20session%20later%20in%20the%20evening%20at%20the%20Linden%20Tree%20Coffeehouse%20party,%20we%20were%20treated%20to%20excellent%20music%20by%20Gail%20Rundlett%20and%20her%20son%20Julian.%20Gail%20really%20lik
