Ingredientes

  • 1 x chipotle or possibly smoked jalapeno
  • 1 c. toasted sesame seeds
  • 1/3 c. fish sauce
  • 2/3 c. rice vinegar
  • 1 Tbsp. minced garlic
  • 1 Tbsp. grated ginger
  • 1 Tbsp. minced lemon grass
  • 1 bn cilantro, minced
  • 1 Tbsp. minced fresh basil
  • 1 Tbsp. minced fresh mint
  •     Juice of 2 limes
  • 2 Tbsp. sesame oil
  • 4 c. cooked Basmati rice
  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • 1/3 c. soy sauce
  • 2 Tbsp. brown sugar
  • 1 x egg, lightly beaten
  • 4 x oysters, shucked
  • 4 x shrimp, peeled, deveined
  • 4 x scallops
  • 4 x crawfish
  • 2 tsp fish sauce
  • 2 Tbsp. rice vinegar
  • 1/2 c. sliced green onions
  • 4 x salmon fillets
  •     Salt, to taste
  • 2 Tbsp. sesame oil

Direcciones

  3. For The Vinaigrette:Combine the pepper, sesame seeds, fish sauce, vinegar, garlic, ginger, lemon grass, cilantro, basil, mint and lime juice in a blender container.
  4. Process till thoroughly mixed.
  5. For The Fried Rice:Heat the oil in a large skillet till it begins to smoke. Add in the rice and saute/fry for 1 minute. Add in the garlic, ginger, soy sauce and brown Sugar.
  6. Saute/fry till the rice is dark brown, stirring frequently.
  7. Cook the egg in a small nonstick skillet till set, forming a thin omelet.
  8. Slice into thin strips and add in to the rice mix. Add in the oysters, shrimp, scallops, crawfish, fish sauce, vinegar and green onions.
  9. Cook for 4 min or possibly till the seafood is cooked through.
  10. For The Salmon:Season the salmon with salt. Heat the sesame oil in a nonstick skillet over medium heat. Add in the salmon. Cook for 4 min. Turn and cook for 2 min longer.
  11. To Assemble
  12. Spoon a mound of the rice in the center of each serving plate and top with the salmon.
  13. Drizzle the vinaigrette around the plate. Serve immediately.
