%20But%20the%20other%20trip%20to%20Texas%20was%20for%20a%20team%20meeting%20and%20I%20have%20a%20great%20team.%20These%20are%20people%20I%20would%20actually%20choose%20to%20hang%20out%20with%20if%20work%20hadn't%20thrown%20us%20together%20by%20chance.%20Needless%20to%20say,%20it%20made%20for%20some%20fun%20nights.%3C/p%3E%3Cp%3EOn%20one%20of%20those%20nights,%20the%20boss,%20a%20true%20Texas%20carnivore%20(not%20sure%20green%20is%20in%20his%20vocabulary),%20chose%20to%20take%20the%20team%20for%20some%20finger-licking%20good%20BBQ%20at%20the%20Salt%20Lick.%20I%20had%20heard%20of%20the%20Salt%20Lick%20during%20a%20recent%20season%20of%20Top%20Chef,%20so%20my%20little%20eyes%20lit%20up%20when%20he%20mentioned%20it.%20I%20had%20decided%20to%20buy%20the%20cookbook%20before%20we%20even%20arrived%20(my%20teammates%20laughed%20at%20my%20eagerness,%20but%20then%20several%20of%20the%20guys%20decided%20to%20tote%20home%20a%20copy%20for%20their%20wives!)%3C/p%3E%3Cp%3EThe%20barbecue%20was%20good%20-%20really%20good.%20Especially%20the%20ribs%20washed%20down%20with%20more%20than%20a%20couple%20pitchers%20of%20Shiner%20Bock.%20If%20I%20find%20myself%20in%20Austin%20again,%20I'm%20going%20back%20for%20more.%20In%20the%20meantime,%20I'll%20content%20myself%20with%20the%20book.%3C/p%3E%3Cp%3EPre-heat%20the%20oven%20to%20375%C2%BA%20F%20and%20butter%20a%201%C2%BD%20qt.%20souffl%C3%A9%20mold.%3C/p%3E%3Cp%3EPre-heat%20a%20medium%20saucepan%20over%20medium%20high%20heat.%20Add%20the%20butter%20and%20melt%20until%20frothy.%20Add%20the%20flour,%20reduce%20the%20heat%20to%20medium,%20and%20cook,%20stirring%20constantly%20for%202%20to%203%20minutes,%20creating%20a%20roux.%3C/p%3E%3Cp%3ERemove%20the%20pan%20from%20the%20heat%20and%20add%20the%20milk,%20whisking%20vigorously.%20Return%20the%20pot%20to%20the%20heat%20and%20bring%20this%20mixture%20to%20a%20boil%20so%20that%20the%20sauce%20will%20thicken.%20(This%20is%20a%20basic%20white%20sauce.)%3C/p%3E%3Cp%3EAgain,%20remove%20the%20pan%20from%20the%20heat%20and%20add%20the%20grated%20cheeses,%20stirring%20well%20to%20melt.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet,%20cook%20the%20chopped%20pancetta%20(if%20using)%20over%20medium%20heat.%20When%20pancetta%20is%20fully%20cooked%20and%20a%20little%20crispy,%20add%20the%20green%20onions%20to%20the%20pan%20and%20saut%C3%A9%20briefly.%20If%20you%20are%20not%20including%20the%20pancetta,%20simply%20saut%C3%A9%20the%20green%20onions%20in%20a%20tbsp.%20of%20butter.%3C/p%3E%3Cp%3EAdd%20the%20green%20onions,%20mustard,%20and%20egg%20yolks%20to%20the%20cheese%20sauce.%20Taste%20this%20mixture%20and%20season%20with%20salt%20and%20pepper.%20(Be%20sure%20to%20season%20well%20or%20over-season%20slightly,%20since%20this%20mixture%20will%20be%20diluted%20by%20the%20egg%20whites%20later.)%20Let%20this%20mixture%20cool%20completely.%3C/p%3E%3Cp%3EWhisk%20the%20egg%20whites%20and%20cream%20of%20tartar%20in%20a%20copper%20bowl%20to%20soft%20peak%20stage.%20In%20three%20stages,%20carefully%20fold%20the%20egg%20whites%20into%20the%20souffl%C3%A9%20base.%20Transfer%20the%20mixture%20to%20a%20buttered%201%C2%BD%20qt.%20souffl%C3%A9%20mold.%20Bake%20at%20375%C2%BA%20F%20for%2030%20minutes,%20or%20until%20risen%20and%20lightly%20browned%20on%20top.%20The%20souffl%C3%A9%20should%20jiggle%20only%20slightly%20when%20finished.%3C/p%3E){kind=link}
