- How to Prepare the Potatoes:1. Preheat the oven to 350 F.
- Place the kosher salt proportionately on a baking sheet.
- Place the potatoes on top of the salt and bake till tender, approximately 45-50 min.
- How to Prepare the Topping:1. Preheat a grill pan or possibly broiler.
- Brush the scallions with extra virgin olive oil and salt and pepper to taste.
- Grill on each side for 2 min and chop coarsely.
- Place the yogurt in a strainer lined with cheesecloth over a bowl.
- Let sit 30 min. Place the liquid removed yogurt in a bowl, add in the grilled scallions and season with salt and pepper.
- Serve over potatoes.
