Ingredientes

  • 4 lrg Baking potatoes
  • 2 c. Kosher salt
  • 2 c. Plain yogurt
  • 2 x Scallions
  • 1 Tbsp. Extra virgin olive oil

  1. How to Prepare the Potatoes:1. Preheat the oven to 350 F.
  2. Place the kosher salt proportionately on a baking sheet.
  3. Place the potatoes on top of the salt and bake till tender, approximately 45-50 min.
  4. How to Prepare the Topping:1. Preheat a grill pan or possibly broiler.
  5. Brush the scallions with extra virgin olive oil and salt and pepper to taste.
  6. Grill on each side for 2 min and chop coarsely.
  7. Place the yogurt in a strainer lined with cheesecloth over a bowl.
  8. Let sit 30 min. Place the liquid removed yogurt in a bowl, add in the grilled scallions and season with salt and pepper.
  9. Serve over potatoes.
