Ingredientes
- 4 lrg Baking potatoes
- 2 c. Kosher salt
- 2 c. Plain yogurt
- 2 x Scallions
- 1 Tbsp. Extra virgin olive oil

- How to Prepare the Potatoes:1. Preheat the oven to 350 F.
- 2. Place the kosher salt proportionately on a baking sheet.
- 3. Place the potatoes on top of the salt and bake till tender, approximately 45-50 min.
- How to Prepare the Topping:1. Preheat a grill pan or possibly broiler.
- 2. Brush the scallions with extra virgin olive oil and salt and pepper to taste.
- 3. Grill on each side for 2 min and chop coarsely.
- 4. Place the yogurt in a strainer lined with cheesecloth over a bowl.
- 5. Let sit 30 min. Place the liquid removed yogurt in a bowl, add in the grilled scallions and season with salt and pepper.
- 6. Serve over potatoes.
