%20to%20salted%20caramel%20and%20decided%20to%20go%3C/p%3E%3Cp%3Eahead%20with%20making%20salted%20caramel%20sauce,%20and%20after%20telling%20B%20I%20was%20a%20little%20crazy%20as%20no%3C/p%3E%3Cp%3EI%20was%20not%20coming%20to%20bed,%20I%20was%20in%20fact%20making%20caramel%20sauce%20he%20just%20nodded%20and%20off%20I%3C/p%3E%3Cp%3Ewent%20downstairs%20in%20my%20pyjamas%20and%20set%20about%20dragging%20baskets%20out%20of%20the%3C/p%3E%3Cp%3Ecupboards%20and%20making%20a%20lovely%20late%20night%20mess%20in%20the%20kitchen.%20During%20the%20process%20of%20stirring%3C/p%3E%3Cp%3Eit,%20I%20managed%20to%20locate%20an%20empty%20jar%20under%20the%20sink%20for%20the%20sauce%20(that%20only%20faintly%20smelled%3C/p%3E%3Cp%3Eof%20the%20sundried%20tomato%20chutney%20it%20previously%20held)%20and%20managed%20to%20successfully%3C/p%3E%3Cp%3Efill%20it%20perfectly%20to%20the%20top!%20Pure%20lucky%20coincidence!%3C/p%3E%3Cp%3EI%20did%20have%20thoughts%20of%20melting%20it%20back%20down%20to%20make%20a%20cake%20filling%20but%20then%20some%20heavenly%20Rodda's%20clotted%20cream%20arrived%E2%80%A6we%20made%20some%20scones%E2%80%A6and%20ya%20know%20the%20cake%20can%20wait%20%E2%80%93%20for%20salted%20caramel%20and%20clotted%20cream%20scones%20came%20to%20me%20in%20a%20dream%20and%20turned%20into%20sweet%20reality!%20Obviously%20do%20not%20open%20it%20late%20at%20night%20under%20the%20cover%20of%20darkness%20with%20a%20spoon%20for%20you%20shall%20have%20sugary%20filled%20dreams%20but%20heck,%20better%20than%20a%20nightmare%20right?%3C/p%3E%3Cp%3EThe%20recipe%20is%20based%20on%20this%20one%20for%20a%20coffee%20version%20(to%20definitely%20be%20tried%20at%20a%20later%20date!)%20and%20we%20love%20it!%3C/p%3E%3Cp%3EIts%20unsurprisingly%20sweet%20with%20a%20subtle%20hint%20of%20salt%20that%20just%20works%20so%3C/p%3E%3Cp%3Eamazingly%20well%20together.%20As%20the%20recipe%20is%20in%20cups%20I%20stuck%20mostly%20to%20it,%20the%20only%20odd%20measurement%20for%20me%20was%20tablespoons%20of%20butter%20-%20I%20just%20sort%20of%20gauged%20out%20the%20chilled%20butter!%3C/p%3E%3Cp%3ESalt%20wise,%20I%20had%20a%20few%20different%20salts%20in%20the%20cupboard%20and%20initially%20thought%20I%20had%20picked%20up%20the%20tiny%20pot%3C/p%3E%3Cp%3Ethat%20remained%20of%20Maldon%20sea%20salt%20flakes%20but%20it%20turned%20out%20actually%20to%20be%20the%20salt%20crystals%20for%3C/p%3E%3Cp%3Erefilling%20the%20grinder...%20Obviously%20I%20realised%20this%20after%20it%20went%20it%20but%20in%20all%3C/p%3E%3Cp%3Efairness%20it%20worked%20perfectly%20so%20just%20go%20with%20whatver%20you%20have!%20Saying%20that%20I%3C/p%3E%3Cp%3Ebought%20some%20pretty%20rose%20pink%20tinted%20Himalayan%20salt%20this%20week%20so%20will%20try%20that%20next%20time!%3C/p%3E%3Cp%3EIn%20a%20small%20heavy%20saucepan%20melt%20the%20butter,%20add%20sugar,%20salt%20and%20cream,%20bring%20to%20the%20boil%20whisking%20constantly,%20reduce%20the%20heat%20and%20simmer%20for%203%20minutes%20or%20until%20slightly%20thickened.%20Stir%20in%20the%20vanilla,%20and%20pour%20into%20a%20sterlised%20jar.%3C/p%3E%3Cp%3EApparently%20it%20will%20keep%20in%20the%20fridge%20up%20to%20a%20month,%20if%20of%20course%20it%20lasts%20that%20long......%3C/p%3E%3Cp%3E..And%20so%20to%20make%20amazing%20scones%20-%20I%20used%20Rodda's%20recipe%20which%20works%20perfectly%20-%20its%20just%20our%20oven%20takes%20a%20little%20bit%20longer%20so%20they%20don't%20get%20as%20large%20but%20they%20still%20taste%20great!%20I%20noticed%20on%20their%20website%20the%20eggwash%20bit%20is%20missing%20-%20beat%20an%20egg%20with%20a%20little%20sugar%20to%20glaze%20them%20prior%20to%20baking.%3C/p%3E%3Cp%3ETop%20with%20clotted%20cream%20and%20a%20layer%20of%20the%20salted%20caramel%20sauce%20in%20whichever%20order%20you%20prefer!%3C/p%3E){kind=link}
