.%3C/p%3E%3Cp%3EInstead%20of%20adding%201/4%20cup%20of%20milk,%20I%20spaced%20and%20put%20a%20full%20cup%20into%20the%20dry%20ingredients.%20As%20soon%20as%20the%20milk%20hit%20the%20bowl,%20I%20immediately%20realized%20my%20mistake.%20My%20first%20reaction%20was%20to%20grab%20a%20plastic%20bag%20to%20pour%20the%20ruined%20batter%20into,%20which%20would%20then%20go%20into%20the%20trash.%20But%20I%20stopped%20myself.%3C/p%3E%3Cp%3EAll%20I%20needed%20to%20do%20was%20change%20the%20amount%20of%20salt,%20baking%20powder,%20baking%20soda,%20shortening%20and%20milk.%20The%20challenge%20was%20that%20I%20had%20used%20the%20rest%20of%20the%20shortening%20in%20the%20original%20batter.%20And%20I%20didn't%20have%20any%20butter%20on%20hand%20(I%20need%20to%20go%20to%20the%20supermarket%20this%20morning%20after%20I%20post%20this!).%20So%20what%20did%20I%20do?%20I%20took%20a%20deep%20breath%20and%20added%20vegetable%20oil%20and%20hoped%20for%20the%20best.%3C/p%3E%3Cp%3EBecause%20I%20had%20made%20this%20biscuit%20recipe%20on%20numerous%20occasions,%20I%20could%20tell%20the%20difference%20in%20the%20texture%20of%20the%20batter.%20It%20was%20more%20moist%20and%20elastic%20than%20usual.%20Despite%20the%20trepidation%20that%20I%20felt,%20I%20forged%20ahead.%20Curiosity%20got%20the%20better%20of%20me%20and%20I%20wanted%20to%20know%20what%20the%20salvaged%20version%20of%20the%20biscuits%20would%20be%20like.%3C/p%3E%3Cp%3EInto%20the%20oven%20they%20went.%20When%20they%20came%20out,%20I%20saw%20that%20they%20had%20spread%20and%20connected%20to%20each%20other.%20The%20biscuit%20batter%20should%20be%20free-standing%20and%20fairly%20firm.%20But%20the%20taste%20was%20actually%20not%20that%20bad.%20The%20biscuits%20were%20softer%20on%20the%20inside%20than%20they%20would%20have%20been%20had%20I%20made%20the%20recipe%20correctly.%20But%20they%20were%20still%20crisp%20on%20the%20outside.%20It's%20not%20clear%20to%20me%20that%20I%20would%20want%20my%20biscuits%20to%20taste%20this%20way%20on%20a%20regular%20basis.%20But%20the%20objective%20of%20salvaging%20them%20paid%20off.%20They%20were%20more%20than%20edible.%20They%20were%20actually%20fairly%20tasty!%3C/p%3E%3Cp%3EBy%20the%20way,%20here%20is%20the%20original%20Emeril%20Lagasse%20recipe%20(from%20New%20New%20Orleans%20Cooking,%20by%20Emeril%20Lagasse%20and%20Jessie%20Tirsch,%20published%20by%20William%20Morrow,%201993)%20for%20the%20cheddar%20drop%20biscuits:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20degrees%20F.%20Lightly%20oil%20a%20pie%20tin.%3C/p%3E%3Cp%3ECombine%20all%20of%20the%20ingredients%20in%20a%20mixing%20bowl%20and%20mix%20well.%20The%20dough%20will%20be%20slightly%20sticky.%3C/p%3E%3Cp%3EDivide%20the%20dough%20into%204%20equal%20portions%20and%20drop%20into%20the%20pie%20tin.%20Bake%20for%2025%20to%2030%20minutes,%20or%20until%20lightly%20browned.%20Serve%20right%20from%20the%20oven.%3C/p%3E%3Cp%3EYield:%204%20biscuits%3C/p%3E){kind=link}
