%20for%20hosting%20this%20week.%20%20To%20participate,%20make%20a%20recipe%20from%20a%20blog%20other%20than%20your%20own%20any%20day%20of%20the%20week.%20%20On%20Saturday,%20place%20the%20Saturday%20Blog%20Showcase%20logo%20on%20your%20post,%20and%20link%20back%20to%20Mr.%20Linky.%20%20That's%20all%20there%20is%20to%20it!%3C/p%3E%3Cp%3EI've%20been%20in%20the%20mood%20for%20a%20good%20granola.%20%20When%20I%20saw%20the%20Vanilla-Scented%20Granola%20on%20Dishing%20Up%20Delights,%20I%20couldn't%20resist!%20%20I%20LOVE%20the%20aroma%20of%20vanilla,%20and%20the%20recipe%20seemed%20easy%20enough%20(I've%20been%20in%20a%20very%20lethargic%20mood%20for%20some%20reason%20this%20week!)%20%20I%20wasn't%20disappointed.%20%20The%20recipe%20was%20extremely%20easy,%20and%20the%20scent%20of%20vanilla%20and%20toasting%20almonds%20with%20a%20touch%20of%20cinnamon%20was%20heavenly.%20%20Once%20it%20was%20removed%20from%20the%20oven,%20I%20could%20hardly%20wait%20for%20it%20to%20cool%20down%20to%20munch%20on%20some.%20%20While%20it%20was%20cooling,%20I%20decided%20I%20was%20going%20to%20add%20some%20dried%20fruit%20to%20the%20mix,%20so%20I%20added%20in%20about%201/2%20cup%20of%20chopped%20dried%20apricots%20and%201/2%20cup%20dried%20cranberries.%20%20I've%20got%20a%20delicious%20cereal%20and%20snack%20for%20a%20few%20days!%20%20Yay!%20%20Thanks%20again%20to%20Dishing%20Up%20Delights!%3C/p%3E%3Cp%3EPosition%20rack%20in%20middle%20of%20oven%20and%20preheat%20to%20300%20degrees.%20Lightly%20spray%20large%20baking%20sheet%20with%20nonstick%20spray.%20Mix%20the%20oats,%20almonds,%20brown%20sugar,%20salt,%20and%20cinnamon%20in%20large%20bowl.%20Combine%20oil,%20honey,%20and%20sugar%20in%20small%20saucepan;%20bring%20to%20simmer%20over%20medium%20heat.%20Remove%20from%20heat;%20stir%20in%20vanilla.%20Pour%20hot%20liquid%20over%20oat%20mixture;%20stir%20well.%20Using%20hands,%20toss%20mixture%20until%20thoroughly%20mixed.%3C/p%3E%3Cp%3ESpread%20granola%20on%20prepared%20baking%20sheet.%20Bake%20until%20golden%20brown,%20stirring%20occasionally,%20about%2030%20minutes.%20Transfer%20sheet%20to%20rack;%20cool%20granola%20completely.%20(Can%20be%20made%202%20weeks%20ahead.%20Store%20in%20airtight%20container%20at%20room%20temperature.)%3C/p%3E%3Cp%3ESource:%20%20Dishing%20Up%20Delights%3C/p%3E){kind=link}
