%20%20Coming%20to%20LaLa's%20house%20(how%20my%20nieces%20and%20nephew%20refer%20to%20me)%20always%20seems%20to%20mean%20cooking%20and/or%20baking%20for%20all%20the%20little%20children%20in%20my%20life.%20%20And%20it%20was%20no%20exception%20this%20time.%20%20The%20first%20thing%20Ashlynne%20wanted%20to%20do%20was%20make%20cupcakes.%20%20Ann%20of%20Thibeault's%20Table%20reminded%20me%20of%20the%20white%20chocolate%20cupcakes%20she%20made%20not%20too%20long%20ago.%20%20They%20sounded%20like%20the%20perfect%20choice%20for%20Miss%20Ashlynne's%20cupcakes.%3C/p%3E%3Cp%3EI%20melted%20the%20butter%20and%20the%20white%20chocolate,%20while%20Ashlynne%20stirred%20up%20the%20dry%20ingredients.%20%20On%20to%20the%20wet%20ingredients.%20%20To%20my%20surprise,%20Ashlynne%20happens%20to%20be%20a%20pro%20at%20cracking%20eggs%20without%20dropping%20any%20shell%20into%20the%20bowl.%20%20Who%20would%20have%20thought%20that%20a%204-year-old%20would%20be%20able%20to%20master%20a%20task%20that%20many%20adults%20have%20difficulty%20with??%20%20We%20combined%20the%20ingredients,%20and%20using%20a%20handheld%20mixer,%20Ash%20made%20sure%20the%20batter%20was%20nice%20and%20smooth.%20%20She%20put%20the%20cupcake%20liners%20into%20the%20tin,%20and%20I%20spooned%20the%20batter%20into%20them.%20%20Now,%20as%20I%20may%20have%20mentioned%20before,%20I%20tend%20to%20be%20a%20bit%20cupcake-challenged.%20%20I%20have%20great%20difficulty%20in%20measuring%20out%20the%20right%20amount%20of%20batter%20for%20each%20cupcake.%20%20And%20this%20time%20was%20no%20different.%20%20All%20the%20cupcakes%20ended%20up%20with%20flanged%20tops,%20so%20a%20little%20trimming%20was%20involved%20before%20frosting%20them.%3C/p%3E%3Cp%3EI%20used%20a%20buttercream%20frosting%20that%20I%20decided%20to%20flavor%20with%20almond%20instead%20of%20vanilla.%20%20It%20paired%20with%20the%20white%20chocolate%20cupcakes%20deliciously!%20%20I%20piped%20on%20the%20frosting%20and%20Ash%20sprinkled%20colored%20sugars%20to%20her%20heart's%20content.%20%20Of%20course,%20a%20little%20taste-testing%20was%20in%20order%20and%20my%20little%20chef%20was%20more%20than%20willing%20to%20comply.%20%20The%20verdict?%20%20Well,%20it%20was%20difficult%20to%20tell%20with%20all%20the%20cake%20and%20frosting%20in%20her%20mouth,%20but%20I%20think%20it%20was%20pretty%20positive.%20%20:D%20%20Another%20successful%20baking%20stint%20under%20our%20belts!%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0F.%3C/p%3E%3Cp%3EMelt%20chocolate%20with%20butter.%20Stir%20until%20smooth.%20Add%20water.%3C/p%3E%3Cp%3EMix%20together%20flour,sugar,%20salt%20and%20baking%20soda.%3C/p%3E%3Cp%3EMix%20together%20sour%20cream,%20vanilla%20and%20eggs,%20add%20butter%20chocolate%20mixture%20and%20flour.%20Beat%20with%20either%20a%20machine%20mixer%20or%20hand%20mixer.%20Pour%20into%20muffin%20tin%20lined%20with%20paper%20cupcake%20liners.%20Bake%20for%20approximately%2020%20to%2025%20minutes.%3C/p%3E%3Cp%3EYield:%20%2024%20cupcakes%3C/p%3E%3Cp%3EAlmond%20Buttercream%20Icing%3C/p%3E%3Cp%3E1%20cup%20butter,%20softened%3C/p%3E%3Cp%3E6%20-%208%20cups%20confectioners%20sugar%3C/p%3E%3Cp%3E1/2%20cup%20whole%20milk%3C/p%3E%3Cp%3E2%20teaspoons%20almond%20extract%3C/p%3E%3Cp%3EIn%20a%20large%20mixing%20bowl,%20place%20the%20butter,%204%20cups%20of%20the%20confectioners'%20sugar,%20then%20the%20milk%20and%20the%20almond%20extract.%20%20On%20medium%20speed%20of%20an%20electric%20mixer,%20beat%20until%20smooth%20and%20creamy,%20about%203%20to%205%20minutes.%20%20Gradually%20add%20the%20remaining%20sugar,%201%20cup%20at%20a%20time,%20beating%20well%20after%20each%20addition%20(about%202%20minutes),%20until%20the%20icing%20is%20thick%20enough%20to%20be%20of%20good%20spreading%20consistency.%20%20You%20may%20not%20need%20to%20add%20all%20of%20the%20sugar.%20%20If%20desired,%20add%20a%20few%20drops%20of%20food%20coloring%20and%20mix%20thoroughly.%20%20Use%20and%20store%20the%20icing%20at%20room%20temperature%20because%20icing%20will%20set%20if%20chilled.%20%20Icing%20can%20be%20stored%20in%20an%20airtight%20container%20for%20up%20to%203%20days.%3C/p%3E%3Cp%3EAdapted%20from%20More%20from%20Magnolia,%20copyright%202004%3C/p%3E){kind=link}
