Sausage Apple Stuffed Squash

Ingredientes

  • 3 acorn squash, halved and seeded
  • 1 1/2 pound pork sausage meat
  • 3/4 c. oatmeal
  • 1/2 teaspoon salt
  • 1/2 c. minced apple
  • 1/4 c. minced onion
  • 1 tbsp. finely minced parsley
  • 1/2 c. lowfat milk

Direcciones

  1. Place squash, cut side down, in a shallow baking pan. Pour a little water in pan. Bake in preheated 350 degree oven about 30 min. While squash is baking, make sausage balls.
  2. Combine rest of ingredients. Shape into about 18 balls. Brown lightly in a skillet. Remove squash from oven; turn cut side up. Season with salt and pepper. Place 3 balls in center of each squash. Bake 40 min longer till squash is tender.
