%20Biscuits.%20%20But%20if%20the%20dad%20you're%20celebrating%20requires%20something%20more%20manly,%20less%20cutsie,%20I%20have%20another%20idea.%3C/p%3E%3Cp%3EIt's%20was%20hard%20putting%20this%20%22recipe%22%20into%20words%20and%20measurements%20because%20it%20started%20as%20one%20of%20those%20things%20that%20you%20(I%20mean%20I--why%20am%20I%20blaming%20you?)%20forgot%20to%20plan/shop%20for.%20%20One%20of%20those%20we're-starving,%20there's-nothing-to-eat,%20what-are-we-going-to-eat%20days.%20%20At%20my%20house%20this%20tends%20to%20happen%20on%20weekends.%3C/p%3E%3Cp%3EAre%20you%20familiar%20with%20people%20who%20can%20take%20leftovers%20and%20morph%20them%20into%20something%20so%20completely%20different%20from%20the%20previous%20night's%20dinner%20that%20it%20looks%20like%20they%20spent%20the%20day%20channeling%20Julia%20Child?%20%20All%20I%20manage%20is%20to%20slap%20some%20cheese%20on%20top%20of%20that%20puppy%20and%20dim%20the%20lights.%20%20Oh,%20and%20their%20hair%20and%20make-up%20look%20fabulous%20and%20they%20never%20sweat%20or%20have%20kitchen%20panic%20attacks.%20%20And%20they%20never%20once%20shoot%20contemptuous%20looks%20towards%20their%20families%20while%20thinking%20geez-a-lou,%20why%20do%20I%20have%20to%20keep%20feeding%20these%20people???%3C/p%3E%3Cp%3EYeah.%20%20You%20know%20who%20I'm%20talking%20about.%20%20Let's%20brush%20away%20our%20sweaty,%20limp%20hair%20and%20give%20them%20a%20collective%20stink%20eye.%3C/p%3E%3Cp%3EFeel%20better?%3C/p%3E%3Cp%3EAnyhow,%20the%20original%20recipe%20(13%20x%209%20pan)%20is%20way%20too%20much%20for%20us.%20%20And%20I%20can't%20disguise%20the%20leftovers%20by%20slapping%20on%20some%20cheese%20since%20there's%20already%20plenty%20of%20cheese%20there.%20%20Dimming%20the%20lights%20won't%20help%20either%20because%20as%20I%20mentioned,%20it's%20breakfast.%20%20So%20I%20cut%20the%20recipe%20in%20half%20(more%20or%20less).%20%20But%20that%20still%20leaves%20me%20with%20leftover%20things%20that%20drive%20me%20up%20a%20wall.%20%20%20I%20sense%20a%20kitchen%20panic%20attack%20coming%20on.%3C/p%3E%3Cp%3EI%20did%20my%20best%20at%20morphing%20the%20leftover%20sausage%20and%20green%20chilies.%20%20But%20don't%20be%20too%20impressed.%20%20These%20Sausage%20Gravy%20Morphmuffins%20aren't%20that%20far%20from%20the%20breakfast%20casserole%20since%20I%20used%20pretty%20much%20the%20same%20ingredients.%20%20And%20I%20didn't%20channel%20Julia%20Child;%20I%20got%20my%20inspiration%20from%20my%20favorite%20item%20(Eggs%20Begnaud)%20at%20the%20Zydeco%20Breakfast%20at%20Cafe%20Des%20Amis.%3C/p%3E%3Cp%3EThe%20Husband%20loves%20these%20hearty%20sausage-egg-biscuit%20thingies%20for%20breakfast...and%20weekend%20lunches...and%20supper.%20%20And%20I%20can%20make%20them%20without%20having%20to%20waste%20my%20evil%20eyes%20on%20my%20starving%20family.%20%20I'll%20save%20those%20for%20other,%20more%20deserving%20situations.%3C/p%3E%3Cp%3EMise%20en%20place:%201/2%20tube%20breakfast%20sausage%20(either%20leftover%20from%20something%20else,%20or%20freeze%20the%20rest%20for%20later),%20red%20pepper%20flakes,%20oregano,%20green%20chilies%20(drained),%20green%20onion,%20half%20&%20half,%20cheese,%20giant,%20jumbo,%20or%20Grands%20biscuits%20(don't%20wimp%20out%20w/%20puny%20biscuits),%20eggs%3C/p%3E%3Cp%3EBrown%20the%20sausage,%20breaking%20into%20small%20pieces.%20%20Add%20the%20red%20pepper%20flakes,%20oregano,%20green%20chilies,%20and%20green%20onions.%20%20If%20I%20have%20mild%20sausage%20I%20usually%20add%20some%20cayenne%20too.%20%20The%20sausage%20seems%20salty%20enough%20for%20me,%20so%20I%20don't%20add%20salt.%3C/p%3E%3Cp%3EBut%20that's%20just%20me.%3C/p%3E%3Cp%3ESaute%20for%20a%20few%20minutes.%3C/p%3E%3Cp%3ENext,%20add%20the%20half%20and%20half--don't%20have%20half%20&%20half?%20%20Use%20evaporated%20milk%20or%20cream.%20%20I've%20tried%20milk%20and%20the%20sauce%20ended%20up%20too%20thin.%3C/p%3E%3Cp%3EBut%20we%20drink%201%25.%3C/p%3E%3Cp%3EAnd%20I'm%20not%20buying%20whole%20milk%20just%20for%20this.%20%20The%20idea%20was%20to%20use%20what%20I%20had.%3C/p%3E%3Cp%3ELet%20the%20half%20&%20half%20heat%20up%20and%20simmer%20to%20thicken.%3C/p%3E%3Cp%3EStart%20working%20on%20the%20scrambled%20eggs%20so%20the%20sauce%20isn't%20sittin'%20around.%3C/p%3E%3Cp%3EThis%20is%20how%20I%20do%20fluffy%20scrambled%20eggs.%20%20Fix%20them%20however%20you're%20used%20to.%3C/p%3E%3Cp%3EWhen%20the%20eggs%20and%20biscuits%20are%20ready,%20cut%20off%20the%20heat%20and%20sprinkle%20in%20the%20cheese%20(use%20whatever%20you%20have).%20%20Stir%20to%20melt%20the%20cheese%20completely.%3C/p%3E%3Cp%3ESplit%20open%20a%20biscuit.%20%20Add%20scrambled%20egg%20to%20one%20half.%3C/p%3E%3Cp%3ESpoon%20on%20the%20%22sausage%20gravy%22%20and%20don't%20be%20shy,%20no.%3C/p%3E%3Cp%3ETop%20with%20more%20green%20onion%20(if%20you%20are%20like%20me)%20and/or%20cheese.%3C/p%3E%3Cp%3ELid%20it%20up%20with%20the%20other%20biscuit%20half.%3C/p%3E%3Cp%3EEnjoy%20the%20man%20food.%3C/p%3E%3Cp%3EEgg%20&%20Sausage%20Gravy%20Breakfast%20Sandwiches%3C/p%3E%3Cp%3Efrom%20Ms.%20enPlace%3C/p%3E%3Cp%3ECook%20the%20biscuits%20per%20package%20directions%20and%20have%20them%20warm%20and%20ready.%3C/p%3E%3Cp%3EBrown%20the%20sausage%20until%20no%20longer%20pink.%20Break%20up%20into%20small%20pieces%20as%20it%20browns.%3C/p%3E%3Cp%3EAdd%20red%20pepper%20flakes,%20oregano,%20green%20chilies,%20and%20green%20onion.%20Saut%C3%A9%20a%20few%20minutes%20until%20the%20chilies%20are%20heated%20through.%3C/p%3E%3Cp%3EAdd%20the%20half%20&%20half%20and%20heat%20through.%20Simmer%20to%20thicken%20while%20scrambling%20the%20eggs.%3C/p%3E%3Cp%3EWhen%20the%20biscuits%20and%20eggs%20are%20done,%20remove%20the%20gravy%20from%20the%20heat.%20Add%20the%20cheese%20and%20stir%20to%20melt%20and%20thicken%20the%20sauce.%3C/p%3E%3Cp%3ESlice%20each%20biscuit%20in%20half.%20Add%20a%20layer%20of%20scrambled%20egg.%20Spoon%20a%20generous%20amount%20of%20sausage%20gravy%20over%20the%20egg.%20If%20desired,%20sprinkle%20additional%20cheese%20and%20green%20onion%20over%20each.%20Top%20with%20remaining%20biscuit%20half.%20%20Makes%205%20servings.%3C/p%3E){kind=link}
