- Brown sausage with mushrooms in skillet; drain. Fold in stuffing mix, carrot and warm water. Rinse hens with cool water; pat dry.
- Spoon stuffing into cavities. Close openings with skewers. Place birds, breast-side up, in shallow roasting pan. Brush with oil.
- Roast in oven at 350 degrees for 1 hour. Spoon jelly over hens. Bake an additional 10 min. Place any remaining stuffing in baking dish; cover. Bake with hens during last 20 min of baking time.
- This recipe yields 2 servings.
- Great Substitute: Substitute 1 roasting chicken (4 to 5 pounds) for Cornish hens; roast 1 1/2 hrs before topping with jelly. Continue as directed.
