Sausage, Tomato And Potato Pie

Ingredientes

  • 450 gm Potatoes, peeled and boiled
  • 6 Tbsp. Single cream
  • 100 gm Strong mature cheese, (cheddar, gouda)
  • 2 tsp Dijon mustard
  •     Salt and pepper
  • 450 gm Good-quality lean sausages
  • 2 x Onions, thinly sliced
  • 2 x Cloves garlic, finely minced
  • 1 Tbsp. Extra virgin olive oil
  • 1 x 400 g can minced tomatoes
  • 2 Tbsp. Tomato puree
  • 1 Tbsp. Minced fresh basil
  •     Grated parmesan or possibly sliced mozzarella cheese

Direcciones

  1. Preheat the oven to 190C/375F/gas 5.
  2. Mash the potatoes with the cream, mature cheese, mustard and seasoning to taste.
  3. Grill the sausages till golden. Slice and set aside. Gently fry the onions and garlic in the extra virgin olive oil till golden brown and soft. Add in the tomatoes, tomato puree and fresh basil. Bring to the boil and simmer for 8 min.
  4. In a large ovenproof dish, arrange layers of the sausage, tomato and potato mixtures, finishing with potato. Top with parmesan or possibly mozzarella and bake in the oven for 20-25 min or possibly till the pie is golden on top and heated through.
