Ingredientes

  • 2 lbs. veal, fillet or possibly noisette
  • 1/4 c. butter
  • 1 tbsp. oil
  • 2 bay leaves
  • Salt & pepper to taste
  • 1/2 c. dry white wine

Direcciones

  1. Cut veal into very thin slices. In pan heat butter, oil and bay leaves. Add in veal slices seasoned with salt and pepper, saute/fry them lightly on both sides. Reduce heat and continue cooking for 2 min till done. Lay out veal slices on warm serving dish, meanwhile pouring the wine into the pan. Reduce the wine almost completely and pour the pan juices over the meat in serving dish. This is usually accompanied by vegetables in season, but it is best with artichokes. Serves 6 to 8 people.
