%20it%20because%20a%20staple%20of%20our%20diet%20anytime%20we%20had%20access%20to%20a%20kitchen,%20whether%20it%20was%20the%20communal%20%E2%80%9Ckitchen%E2%80%9D%20of%20a%20hostel%20or%20our%20own%20apartment%20for%20the%20week.%20It%20was%20a%20dish%20that%20made%20us%20feel%20normal.%20For%20a%20few%20moments,%20we%20weren%E2%80%99t%20dirty%20travelers%20living%20our%20of%20our%20backpacks%20for%20the%20next%2010%20weeks,%20having%20picnics%20of%20bread,%20fruit%20and%20cheese%20from%20the%20local%20Aldi%20and%20saving%20up%20for%20real%20restaurant%20dinners%20when%20we%20could%20(not%20that%20it%20wasn%E2%80%99t%20great!).%20But%20it%20was%20the%20moments%20when%20we%20had%20access%20to%20a%20kitchen%20that%20were%20magical.%20When%20we%20could%20pretend%20that%20we%20weren%E2%80%99t%20moving%20every%20few%20days,%20but%20grounded,%20just%20for%20a%20few%20days.%20We%20dined%20on%20pasta,%20salads,%20soups%20and%20occasionally%20some%20chicken%20or%20beef.%20The%20meals%20were%20always%20simple%20as%20we%20had%20a%20limited%20pantry%20to%20work%20with,%20but%20somehow%20the%20zucchini%20over%20pasta%20was%20always%20a%20favorite.%3C/p%3E%3Cp%3EZucchini,%20garlic,%20salt,%20oil%20and%20pasta.%20The%20list%20of%20ingredients%20might%20be%20basic%20but%20the%20secret%20is%20high%20quality%20ingredients.%20Fresh%20picked%20zucchini,%20still%20warm%20from%20the%20sun,%20fresh%20pasta%20(or%20homemade%20if%20you%20really%20have%20the%20time),%20good%20quality%20oil%20and%20sea%20salt.%20While%20backpacking,%20we%20were%20lucky%20to%20have%20a%20decently%20sharp%20knife%20and%20would%20do%20everything%20by%20hand.%20Back%20in%20the%20states,%20I%E2%80%99m%20able%20to%20cut%20the%20preparation%20time%20by%20at%20least%20half%20thanks%20to%20my%20mandoline.%20You%20want%20to%20slice%20the%20zucchini%20extra%20thin%20so%20the%20oil%20and%20flavors%20saturate%20each%20piece%20and%20it%20cooks%20quickly.%20You%20can%20slice%20rounds%20but%20I%20prefer%20ribbons%20as%20it%20complements%20the%20strands%20of%20pasta%20better.%20The%20amount%20of%20zucchini%20might%20look%20overwhelming,%20but%20trust%20me,%20it%20shrinks%20significantly%20when%20cooked.%20With%20a%20mandoline%20the%20whole%20dish%20takes%20about%202o%20minutes.%20Prep%20everything%20while%20you%20boil%20the%20water,%20saute%20the%20zucchini%20while%20the%20pasta%20cooks,%20put%20it%20all%20together%20and%20enjoy!%3C/p%3E%3Cp%3EBring%20a%20large%20saucepan%20of%20salted%20water%20to%20a%20boil.%20Add%20pasta%20and%20cook%20until%20al%20dente.%3C/p%3E%3Cp%3EMeanwhile,%20heat%20olive%20oil%20in%20a%20large%20saute%20pan%20until%20shiny.%20Add%20garlic%20and%20cook%20until%20fragrant,%20about%202%20minutes.%3C/p%3E%3Cp%3EAdd%20zucchini%20ribbons%20and%20a%20generous%20pinch%20of%20sea%20salt.%20Saute%20for%207-10%20minutes%20until%20zucchini%20is%20cooked%20through%20and%20has%20absorbed%20oil%20and%20flavors.%20(Feel%20free%20to%20add%20additional%20oil%20if%20needed.%20You%20want%20the%20ribbons%20to%20be%20well%20coated%20but%20not%20greasy).%3C/p%3E%3Cp%3EToss%20zucchini%20with%20pasta%20and%20serve%20immediately.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
