Savory Apple Hickory Roasted Chicken

Ingredientes

  • Brine:
  • 2 quarts water
  • 2 quart apple juice (I use Healthy Balance Apple Juice sweetened with Splenda)
  • ¼ cup kosher salt
  • 1 tablespoon black peppercorns
  • 6 garlic cloves, chopped in half
  • ½ cup Splenda
  • ¼ cup liquid smoke, hickory flavored
  • 7 to 10 sprigs of thyme
  • 3 whole bay leaves
  • Chicken:
  • 1 whole chicken, thawed
  • 3 tablespoons unsalted butter, at room temp
  • 1 tablespoon Old Bay Seasoning
  • 1 tablespoon liquid smoke, hickory flavored
  • Salt and pepper

  2. Heat all the ingredients until salt is dissolved and cool to room temp.
  3. Chicken:
  4. In a large container or bag, put the chicken and brine. Soak the chicken 8 hours or overnight. Rinse and dry the chicken. In a bowl add butter, Old Bay seasoning, and liquid smoke mixing them well. Rub the chicken with the butter mixture and salt & pepper. Place the chicken in 375 F oven for about 1 and a half hours or until chicken is at 175 F inside. Tent the chicken the first hour then remove foil for the last 30 minutes.
