Receta Savory Apple Hickory Roasted Chicken
Ingredientes
- Brine:
- 2 quarts water
- 2 quart apple juice (I use Healthy Balance Apple Juice sweetened with Splenda)
- ¼ cup kosher salt
- 1 tablespoon black peppercorns
- 6 garlic cloves, chopped in half
- ½ cup Splenda
- ¼ cup liquid smoke, hickory flavored
- 7 to 10 sprigs of thyme
- 3 whole bay leaves
- Chicken:
- 1 whole chicken, thawed
- 3 tablespoons unsalted butter, at room temp
- 1 tablespoon Old Bay Seasoning
- 1 tablespoon liquid smoke, hickory flavored
- Salt and pepper
Direcciones
- Brine:
- Heat all the ingredients until salt is dissolved and cool to room temp.
- Chicken:
- In a large container or bag, put the chicken and brine. Soak the chicken 8 hours or overnight. Rinse and dry the chicken. In a bowl add butter, Old Bay seasoning, and liquid smoke mixing them well. Rub the chicken with the butter mixture and salt & pepper. Place the chicken in 375 F oven for about 1 and a half hours or until chicken is at 175 F inside. Tent the chicken the first hour then remove foil for the last 30 minutes.
