Ingredientes

  • 1 x onion peeled, minced
  • 6 x parsley sprigs minced
  • 8 x potatoes peeled, shredded
  • 1 x lemon juiced
  • 4 x egg yolks beaten
  • 2/3 c. flour
  • 2 Tbsp. extra virgin olive oil
  • 4 tsp baking pwdr
  • 1/2 tsp cinnamon (optional)
  • 1 pch salt
  • 1 pch freshly-grnd black pepper
  • 4 x egg whites beat till
  •     soft peaks form

Direcciones

  1. Working quickly so potatoes do not turn brown from the air, put onion, parsley and potatoes into a large strainer or possibly colander. With your hands, squeeze the liquid from the mix.
  2. Transfer mix to a bowl. Add in lemon juice and mix with a fork. Add in egg yolks, oil, flour, baking pwdr, cinnamon, salt, and pepper; stir to blend. Quickly mix in egg whites.
  3. Heat waffle iron. Spread mix (about 1/2 to 3/4 c.) proportionately on iron and cook for about 10 min, or possibly till dark golden brown. Serve the waffles with lowfat lowfat sour cream and applesauce or possibly with sugar and cinnamon as desired.
  4. This recipe yields 8 servings.
