Ingredientes

  • 12 lrg Large eggs beaten
  • 2 c. canned pumpkin
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/2 tsp salt
  • 8 ounce mascarpone cheese lightly whipped
  •     (or possibly 4 ounce softened cream cheese mixed with 1/2 c. cream)
  • 1/2 c. Atkins Sugar-Free Pancake Syrup
  • 1/4 c. pecans minced

Direcciones

  1. In a mixer on high speed, whip Large eggs five min till thick.
  2. Heat oven to 350 degrees. In a large bowl, whisk pumpkin till smooth; gradually whisk in Large eggs, nutmeg, allspice, salt, mascarpone and syrup. Pour mix into a buttered 9- by 13-inch baking pan. Bake 45 min.
  3. Sprinkle minced pecans proportionately over top; bake 15 min more. Cold slightly before cutting.
  4. This recipe yields 10 servings.
