%20%20and%20set%20aside.%3C/p%3E%3Cp%3EThickened%20to%20the%20consistency%20of%20thin%20pancake%20batter.%3C/p%3E%3Cp%3EIn%20a%20skillet,%20cook%20onions%20in%20olive%20oil%20(or%20butter%20if%20using%20original%20recipe%20ingredients)%20until%20golden%20brown.%3C/p%3E%3Cp%3EI%20sauteed%20the%20oinons%20until%20almost%20done%20to%20my%20liking%20before%20adding%20the%20chopped%20green%20pepper.%20%20This%20is%20because%20I%20didn%E2%80%99t%20want%20the%20moisture%20from%20the%20pepper%20releasing%20into%20the%20oil%20before%20the%20oinions%20had%20a%20chance%20to%20start%20browning.%20%20I%20cooked%20the%20mixture%20just%20a%20bit%20more,%20then%20stirred%20in%20the%20grated%20carrot%20and%20put%20it%20all%20aside%20until%20ready%20to%20assemble%20the%20dish.%20%20I%20figured%20the%20pepper%20and%20carrot%20would%20have%20plenty%20of%20time%20to%20cook%20in%20the%20oven.%3C/p%3E%3Cp%3ESpread%20one%20third%20(1/2%20cup)%20of%20the%20white%20sauce%20in%20bottom%20of%20baking%20dish%20and%20top%20with%20half%20of%20the%20potatoes.%20Spread%20out%20half%20of%20the%20onion/veggie%20mix,%20ham,%20and%20one%20third%20(1/2%20cup)%20of%20the%20cheese.%20Pour%20another%20third%20of%20the%20sauce%20%20on%20that%20layer.%20%20Add%20the%20other%20half%20of%20the%20onion/veggie%20mix,%20ham%20and%20top%20with%20the%20last%201/2%20cup%20of%20sauce%20and%20remaining%20cheese.%3C/p%3E%3Cp%3EAfter%20the%20last%20of%20the%20sauce%20and%20before%20the%20last%20of%20the%20cheese.%3C/p%3E%3Cp%3EAll%20set%20to%20pop%20in%20the%20oven!%3C/p%3E%3Cp%3EBake%20for%2045%20%E2%80%93%20an%20hour%20minutes%20%20until%20golden%20and%20bubbly.%20Then,%20have%20at%20it!%3C/p%3E%3Cp%3EThis%20was%20really,%20really%20tasty.%20%20Again,%20I%20do%20think%20that%20the%20leftover%20ham,%20with%20its%20sweet%20and%20spicy%20flavor,%20added%20tremendously%20to%20the%20flavor.%20%20But,%20I%20think%20adding%20the%20green%20pepper%20and%20carrot%20gave%20a%20flavor%20boost%20to%20this%20old%20favorite,%20as%20well.%3C/p%3E%3Cp%3EThere%20is,%20of%20course,%20no%20reason%20why%20this%20can%E2%80%99t%20be%20made%20with%20a%20chopped%20up%20ham%20steak%20or%20sliced%20ham.%20For%20some%20sweetness,%20use%20pineapple%20or%20apple%20juice%20in%20lieu%20of%20water%20if%20using%20evaporated%20or%20powered%20milk,%20or%20sprinkle%20some%20brown%20sugar,%20as%20well%20as%20some%20clove%20powder%20over%20each%20layer.%3C/p%3E%3Cp%3EAnd,%20if%20you%20prefer%20a%20vegetarian,%20or%20even%20vegan%20version,%20this%20seasoning%20method%20will%20work%20for%20you,%20also.%20%20%20And,%20vegetarian%20or%20not,%20ou%20can%20also%20add%20more%20potatoes%20or%20other%20vegetables.%20Just%20be%20be%20sure%20to%20cook%20more%20watery%20veggies%20%20down%20before%20baking%20the%20final%20dish%20so%20as%20to%20not%20add%20too%20much%20moisture.%3C/p%3E%3Cp%3EIf%20you%20want%20a%20%E2%80%9Cmeaty%E2%80%9D%20texture%20in%20there,%20use%20soy%20or%20seitan%20(wheat%20gluten)%20based%20protein%20items%20that%20have%20a%20smoky/ham%20sort%20of%20flavor.%20Also%20%E2%80%93%20when%20I%20was%20eating%20a%20vegan%20diet,%20I%20had%20no%20problem%20making%20a%20nice%20roux/white%20sauce%20with%20soy%20or%20rice%20milk,%20etc.%20%20I%20think%20I%20actually%20made%20it%20with%20just%20flour,%20oil,%20and%20water%20a%20few%20times.%20%20(Hmm,%20I%20will%20have%20to%20try%20that%20to%20make%20sure%20my%20memory%20is%20correct!)%3C/p%3E%3Cp%3EAll-in-all,%20this%20is%20a%20tasty%20and%20pleasantly%20textured%20dish,%20whether%20you%20follow%20the%20traditional%20recipe%20I%20link%20to%20at%20the%20top,%20%20try%20out%20my%20version%20or%20experiment%20with%20my%20additional%20suggestions.%20%20In%20the%20end,%20it%20is%20indeed%20one%20of%20those%20comfort%20food%20dishes%20that%20every%20cook%20should%20have%20in%20their%20repertoire.%20%20Except%20for%20my%20friend%20Kathleen%20who%20can%20no%20longer%20eat%20onions.%20%20I%20have%20NO%20idea%20what%20to%20substitute%20for%20that!%3C/p%3E){kind=link}
