- Cook the potatoes in lightly salted water till just tender. Allow to cold slightly, then peel and slice. There should be about 3 c. of sliced potatoes. Arrange the potatoes in a buttered, shallow 1 1/2 qt baking dish.
- Combine the lowfat sour cream with the beaten Large eggs, lowfat milk, chives, salt and pepper. Pour over the potatoes in the baking dish and sprinkle with the shredded cheese.
- Bake at 350 degrees for about 30 min, till heated through and lightly browned.
