.%20I%20didn%E2%80%99t%20let%20my%20phone%20shuffle%20my%20music.%3C/p%3E%3Cp%3EI%20just%20cooked,%20and%20listened.%3C/p%3E%3Cp%3EAfter%20a%20frantic%20summer%20of%20cooking%20in%20the%20Hamptons,%20where%20my%20days%20stretched%20for%2014%20hours%20and%20I%20had%20very%20little%20%E2%80%93%20if%20any%20%E2%80%93%20privacy,%20coming%20home%20to%20cook%20in%20New%20York%20City%20has%20been%20a%20gift.%20Waking%20up%20in%20my%20bed,%20doing%20yoga%20on%20my%20floor,%20taking%20Mitra%20for%20a%20long%20walk,%20and%20jumping%20on%20the%20subway%20to%20go%20to%20work%20has%20taken%20completely%20new%20significance.%3C/p%3E%3Cp%3EThe%20transitions%20are%20not%20going%20unnoticed.%3C/p%3E%3Cp%3EOn%20September%2011th,%20part%20of%20my%20job%20was%20taking%20my%20boss%E2%80%99%20cat%20across%20town%20to%20the%20dentist.%20Yes.%20The%20animal%20hospital%20was%20a%20block%20from%20where%20I%20lived%20my%20first%20year%20in%20NYC,%20straight%20out%20of%20college,%20back%20in%202003.%20Walking%20by%20it%20again%20I%20found%20my%20breath%20catch.%20On%20this%20beautiful,%20solemn%20day%20in%20the%20city%20I%20love%20so%20much,%20I%20was%20given%20the%20chance%20to%20reflect%20on%20my%209%20years%20in%20NYC,%20who%20I%20am%20now%20versus%20then.%20Back%20then%20I%20was%20an%20actor%20hungry%20for%20the%20stage.%20I%20lived%20in%20that%2010%C3%9730%20apartment%20with%20three%20guy-friends%20from%20college.%20We%20loved%20it.%20We%20worked%20(sorta)%20hard%20and%20partied%20(maybe%20too%20much).%20We%20had%20fun.%20We%E2%80%99re%20still%20all%20good%20friends.%20How%20rich%20and%20full%20of%20love%20and%20hardship%20my%20time%20has%20been%20since%20then,%20now%20a%20calm%20and%20seasoned%2031%20New%20Yorker.%3C/p%3E%3Cp%3EThe%20transitions%20are%20not%20going%20unnoticed.%3C/p%3E%3Cp%3EOn%20Wednesday%20I%20got%20a%20heart-wrenching%20phone%20call%20from%20a%20favorite%20friend%20%E2%80%93%20the%20kind%20women%20want%20to%20push%20off%20as%20long%20as%20we%20can.%20The%20kind%20where%20you%E2%80%99re%20immediate%20reaction%20is,%20%E2%80%9Cwe%E2%80%99re%20too%20young%20to%20be%20having%20this%20conversation!!!%E2%80%9D.%20The%20kind%20where%20you%20cry,%20and%20pray,%20and%20carry%20about%20your%20day%20with%20a%20rock%20in%20your%20stomach%20and%20a%20flutter%20in%20your%20heart.%20We%20talked%20through%20it,%20we%20continue%20to%20talk%20through%20it,%20and%20we%E2%80%99ll%20deal%20with%20whatever%20comes%20of%20it.%20But%20we%E2%80%99re%20now%20at%20that%20age%20where%20these%20conversations%20happen.%3C/p%3E%3Cp%3EThe%20transitions%20are%20not%20going%20unnoticed.%3C/p%3E%3Cp%3EI%20made%20a%20lot%20of%20food%20in%20the%20kitchen%20yesterday%20for%20the%20family%20I%20work%20for,%20and%20as%20all%20this%20reflection%20was%20bubbling%20away%20I%20really%20let%20myself%20listen%20to%20my%20movements%20and%20what%20they%20created:%20the%20sound%20of%20my%20knife%20slicing%20through%20parsnips;%20the%20sizzle%20of%20slab%20bacon;%20the%20rush%20of%20water%20going%20into%20the%20pasta%20pot;%20the%20click%20of%20the%20dishwasher;%20the%20clang%20of%20a%20plate%20on%20the%20marble%20counter.%3C/p%3E%3Cp%3EI%20thought%20of%20my%20city,%20my%20dearest%20friend,%20the%20person%20I%20was%20almost%20ten%20years%20ago,%20the%20cook%20I%20am%20after%20a%20long%20summer%20in%20the%20Hamptons.%3C/p%3E%3Cp%3EAnd%20I%20made%20this.%20It%E2%80%99s%20based%20on%20a%20recipe%20in%20the%20current%20issue%20of%20Food%20and%20Wine.%20It%E2%80%99s%20sweet%20and%20salty.%20It%E2%80%99s%20colorful.%20It%20pops%20in%20the%20pan.%20It%20brings%20a%20little%20fun%20into%20the%20kitchen%20as%20you%20teach%20the%2013-yr%20old%20in%20the%20house%20the%20joy%20of%20opening%20a%20fresh%20pomegranate%20and%20finding%20the%20seeds%20hidden%20in%20the%20pockets%20of%20the%20coral-like%20fruit.%20It%20encourages%20several%20moments%20of%20praise%20from%20your%20boss.%20It%E2%80%99s%20comforting%20to%20make%20in%20a%20quiet%20kitchen%20when%20there%E2%80%99s%20a%20lot%20on%20your%20mind.%3C/p%3E%3Cp%3EScallops%20with%20Bacon,%20Grapefruit%20and%20Pomegranate%20over%20Squid%20Ink%20Spaghetti%3C/p%3E%3Cp%3EServes%202%3C/p%3E%3Cp%3ENotes:%20I%20realize%20squid%20ink%20spaghetti%20is%20not%20easily%20found%20on%20a%20grocery%20store%20shelf.%20I%20was%20lucky%20to%20stumble%20upon%20it%20and%20snatched%20it%20up,%20as%20I%20love%20the%20deep%20color.%20When%20I%20recreated%20this%20dish%20for%20myself%20I%20used%20a%20gluten-free%20pasta%20from%20DeBoles%20I%20had%20around,%20and%20it%20was%20tasty.%20I%20would%20suggest,%20however,%20using%20as%20fresh%20a%20pasta%20as%20you%20can%20(find%20dried%20ones%20in%20specialty%20markets%20that%20take%203-4%20minutes%20to%20cook)%20as%20they%20retain%20a%20bit%20of%20texture%20while%20weighted%20foods%20are%20placed%20upon%20them.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3ENote:%20the%20scallops%20take%20about%2015-20%20minutes%20to%20cook,%20so%20prepare%20pasta%20accordingly.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet,%20cook%20bacon%20on%20medium/high%20until%20crispy.%20Remove%20to%20a%20plate.%3C/p%3E%3Cp%3ESeason%20scallops%20with%20salt%20and%20pepper%20and%20sear%20on%20one%20side%20for%203%20minutes.%20Flip%20and%20sear%20another%20minute.%20Add%20shallots%20and%20toss%20bacon%20fat,%20scallops%20and%20shallots%20together.%20Cook%20for%20another%202%20minutes,%20or%20until%20scallops%20are%20cooked%20to%20your%20preference.%3C/p%3E%3Cp%3ERemove%20scallops%20with%20slotted%20spoon%20to%20a%20plate%20or%20bowl.%3C/p%3E%3Cp%3EAdd%20grapefruit%20juice%20and%20wine%20and%20cook,%20scraping%20up%20browned%20bits,%20for%20about%202%20minutes.%20Strain%20grit%20and%20onions,%20and%20return%20to%20pan.%20Add%20butter%20and%20capers%20and%20cook,%20shaking%20the%20pan%20to%20thicken%20the%20juices.%20Toss%20scallops%20back%20in%20with%20bacon%20and%20pomegranates,%20and%20shake%20the%20pan%20to%20coat%20completely.%3C/p%3E%3Cp%3ERemove%20from%20heat.%20Add%20grapefruit%20segments.%3C/p%3E%3Cp%3EServe%20over%20pasta.%3C/p%3E){kind=link}
