Ingredientes

  • 1 dozen large large eggs
  • 1/2 teaspoon salt
  • 2 T butter
  • 1 c. raw corn kernels
  • 1 (4 ounce) can minced green chiles, liquid removed
  • 1/3 c. sliced green onions
  • 8 ounce Monterey Jack cheese with Jalapeno peppers, cut in cubes
  • Chunky tomato salsa
  • Pepper to taste

Direcciones

  1. Beat large eggs, salt, and pepper with wire whisk in large bowl. Heat butter in large frying pan over medium heat. Add in corn, chiles, and onions. Cook 4-5 min till onions are tender.Stirring constantly, add in egg mix; cook and stir with a wooden spoon gently till large eggs form soft curds. Remove from heat and stir in cheese. Serve salsa on the side.
