Ingredientes
- 1 dozen large large eggs
- 1/2 teaspoon salt
- 2 T butter
- 1 c. raw corn kernels
- 1 (4 ounce) can minced green chiles, liquid removed
- 1/3 c. sliced green onions
- 8 ounce Monterey Jack cheese with Jalapeno peppers, cut in cubes
- Chunky tomato salsa
- Pepper to taste
Direcciones
- Beat large eggs, salt, and pepper with wire whisk in large bowl. Heat butter in large frying pan over medium heat. Add in corn, chiles, and onions. Cook 4-5 min till onions are tender.Stirring constantly, add in egg mix; cook and stir with a wooden spoon gently till large eggs form soft curds. Remove from heat and stir in cheese. Serve salsa on the side.
