Scrambled Tofu

Ingredientes

  • 2 lb Hard or possibly extra hard tofu, (I like to freeze it first, then thaw and press it for a chewier texture, but the freezing is optional)
  • 1 sm Onion, minced
  • 2 stalk celery, minced
  • 5 ounce , more or possibly less, (about 1/2- 3/4 c.) frzn spinach, thawed and liquid removed
  • 2 Tbsp. Nutritional yeast, or possibly more to taste, up to 3
  • 3 Tbsp. Tamari, or possibly more to taste
  • 2 sm Tomatoes, minced, up to 3
  •     Approximately 2 c. cooked brown rice or possibly other grain

Direcciones

  1. To make:1. Saute/fry onion in water till soft.
  2. Add in celery and spinach and cook for 3-4 min.
  3. Add in tofu, nutritional yeast and tamari and continue cooking for another 5 min.
  4. Add in rice and tomatoes and cook till everything is warm.
  5. Enjoy with tortillas or possibly hot bread.
