Ingredientes

  • 10 pie shells
  • 5 lbs shrimp, cooked- 1 cup per shell
  • 5 lbs scallops, baby, cooked- 1 cup per shell
  • 3 lbs leeks- wash, slice, 4 1/2 oz per shell
  • 2 lbs red peppers- dice, 4 1/2 oz per shell
  • 2 lbs asparagus tips- 4 1/2 oz per shell
  • 3 qts eggs, fresh
  • 1 gal heavy cream
  • 1 1/2 qts heavy cream
  • 1/4 cup Old Bay seasoning
  • garnish- fresh parsley- wash, chop

Direcciones

  1. Saute or roast (in a 425 degree oven) red peppers and leeks until slightly charred.
  2. Place the shrimp, scallops, asparagus, red peppers, leeks in each pie shell.
  3. Mix (in a mixing bowl using a wire whip) the cream and eggs for approximately 5 minutes, until the mix is slightly light and/or fluffy.
  4. Add seasoning, and fill each shell with the mixture. Then top with fresh parsley.
  5. Bake 15-18 minutes in a 425 degree oven or until golden brown and solid.
