- Saute or roast (in a 425 degree oven) red peppers and leeks until slightly charred.
- Place the shrimp, scallops, asparagus, red peppers, leeks in each pie shell.
- Mix (in a mixing bowl using a wire whip) the cream and eggs for approximately 5 minutes, until the mix is slightly light and/or fluffy.
- Add seasoning, and fill each shell with the mixture. Then top with fresh parsley.
- Bake 15-18 minutes in a 425 degree oven or until golden brown and solid.
