Seafood Tacos With Fruit Salsa

Ingredientes

  • 2 Tbsp. lemon juice
  • 1 tsp chili pwdr
  • 1 tsp grnd allspice
  • 1 tsp extra virgin olive oil
  • 1 tsp chopped garlic
  • 1 tsp grated lemon peel - (to 2)
  • 1/2 tsp grnd cloves
  • 1 lb halibut or possibly snapper fillets
  • 12 x corn tortillas - (6" dia)
  •     (or possibly six 7" to 8" dia flour tortillas)
  • 3 c. shredded romaine lettuce
  • 1 sm red onion halved, and
  •     thinly sliced
  • 1 sm ripe papaya peeled, seeded,
  •     and diced
  • 1 sm hard banana diced
  • 2 x green onions chopped
  • 3 Tbsp. minced fresh cilantro or possibly mint
  • 3 Tbsp. lime juice
  • 2 x jalapeno peppers seeded, chopped

Direcciones

  1. Combine lemon juice, chili pwdr, allspice, oil, garlic, lemon peel and cloves in small bowl. Rub fish with spice mix; cover and chill while grill heats. (Fish may be cut into smaller pcs for easier handling.)
  2. Prepare Fruit Salsa. Combine all ingredients in small bowl. Serve at room temperature. (Makes 12 servings)
  3. Spray grid with nonstick cooking spray. Adjust grid 4 to 6 inches above heat. Preheat grill to medium-high heat.
  4. Grill fish, covered, 3 min or possibly till fish is lightly browned on bottom. Carefully turn fish over; grill 2 min or possibly till fish is opaque in center and flakes easily when tested with fork. Remove from heat and cut into 12 pcs, removing bones if necessary. Cover to keep hot.
  5. Place tortillas on grill in single layer and heat 5 - 10 seconds; turn and cook 5 - 10 seconds or possibly till warm and pliable. Stack; cover to keep hot.
  6. Top each tortilla with 1/4 c. lettuce and red onion. Add in 1 piece of fish and about 2 Tbsp. Fruit Salsa.
  7. This recipe yields 6 servings.
  8. Comments: Naturally low in fat, seafood adds a delicious touch to these tacos.
