%20So%20while%20I%E2%80%99ll%20still%20take%20the%20time%20to%20flip%20through%20cookbooks,%20some%20days%20the%20inspiration%20doesn%E2%80%99t%20come%20by%20the%20time%20we%20want%20to%20leave%20so%20we%E2%80%99ll%20put%20our%20culinary%20fate%20into%20the%20hands%20of%20what%E2%80%99s%20available%20at%20the%20Teet%20or%20the%20Whole%20Foods%20and%20hope%20for%20the%20best.%3C/p%3E%3Cp%3EThis%20is%20the%20dish%20with%20the%20glaze,%20and%20you%20can%20see%20it%E2%80%99s%20just%20a%20bit%20too%20much.%3C/p%3E%3Cp%3EThe%20Teet%20has%20become%20a%20really%20solid%20grocery%20store%20for%20us,%20mainly%20because%20we%20can%20usually%20find%20everything%20we%20need%20and%20at%20pretty%20reasonable%20prices,%20but%20the%20layout%20doesn%E2%80%99t%20always%20jive%20well%20with%20sparking%20a%20dinner%20idea.%20Despite%20usually%20being%20busier,%20I%20can%20still%20get%20a%20spark%20a%20little%20more%20easily%20at%20Whole%20Foods,%20likely%20because%20they%20usually%20put%20the%20best%20seasonal%20produce%20front%20and%20center%20and%20arrange%20it%20in%20a%20very%20visually%20pleasing%20way.%20This%20was%20the%20case%20a%20few%20weeks%20ago%20when%20figs%20started%20popping%20up%20and%20I%20grabbed%20a%20box%20without%20immediately%20knowing%20what%20to%20do%20with%20it,%20but%20pretty%20soon%20we%20had%20the%20idea%20to%20pair%20them%20with%20pork%20belly%20and%20make%20a%20sauce%20that%20was%20based%20on%20Barcelona%20Wine%20Bar%E2%80%99s%20chorizo%20with%20sweet%20and%20sour%20figs%20tapa.%3C/p%3E%3Cp%3EWe%E2%80%99ve%20made%20it%20a%20couple%20of%20times%20now,%20and%20the%20first%20attempt%20is%20still,%20I%20think,%20the%20best%20one,%20because%20the%20second%20time%20around%20we%20reduced%20the%20sauce%20a%20little%20too%20much%20and%20added%20a%20little%20too%20much%20sugar%20and%20it%20became%20a%20too%20sweet%20and%20overpowered%20the%20figs.%20You%20still%20want%20that%20acidic%20kick%20of%20the%20vinegar%20to%20come%20through%20rather%20than%20try%20to%20turn%20it%20into%20a%20glaze,%20because%20that%20also%20helps%20cut%20the%20fattiness%20of%20the%20belly.%3C/p%3E%3Cp%3EPork%20Belly%20with%20Sweet%20and%20Sour%20Fresh%20Figs%3C/p%3E%3Cp%3EServes%204%20as%20a%20tapas%20dish,%20or%202%20as%20a%20more%20substantial%20dish%3C/p%3E%3Cp%3EMix%20the%20salt%20and%20sugar%20together%20and%20rub%20over%20the%20pork%20belly.%20Let%20it%20sit%20for%20at%20least%20an%20hour%20or%20two,%20and%20no%20more%20than%20six.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20300%20degrees.%20Roast%20the%20pork%20belly%20int%20the%20oven%20for%20about%20one%20and%20a%20half%20to%20two%20hours,%20and%20remove%20from%20the%20oven%20to%20let%20rest,%20then%20cut%20into%20slices.%3C/p%3E%3Cp%3ECombine%20the%20vinegars%20and%20brown%20sugar%20into%20a%20small%20saucepan%20and%20cook%20over%20medium%20heat%20until%20slightly%20reduced%20but%20not%20overly%20so.%20Keep%20an%20eye%20on%20it%20and%20taste%20it%20to%20make%20sure%20there%20is%20still%20a%20bit%20of%20acidity%20to%20the%20sauce.%20Arrange%20the%20pork%20belly%20and%20figs%20onto%20plates,%20and%20then%20finish%20with%20the%20sauce%20and%20a%20drizzle%20of%20olive%20oil,%20and%20serve%20immediately.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
