%20post%20about%20the%20recipe%20and%20share%20whose%20blog%20we%20were%20secretly%20assigned.%20It%E2%80%99s%20a%20great%20way%20to%20meet%20other%20bloggers%20and%20find%20new%20recipes.%3C/p%3E%3Cp%3EThis%20month%20I%20was%20assigned%20Amy's%20Cooking%20Adventures.%20Amy%20is%20a%20stay%20at%20home%20mom%20with%20two%20little%20boys.%20She%20enjoys%20baking%20quite%20a%20bit%20and%20like%20me,%20cooking%20healthy%20as%20much%20as%20possible.%20I%20really%20had%20a%20hard%20time%20deciding%20what%20to%20make%20from%20her%20blog.%20I%20debated%20about%20preparing%20the%20Heart%20Healthy%20Vegetable%20Alfredo%20with%20Pan%20Seared%20Chicken%20,%20which%20is%20still%20on%20my%20to-make%20pile,%20likely%20later%20this%20week,%20but%20from%20the%20day%20the%20assignment%20came%20to%20my%20in-box,%20I%20knew%20what%20I%20was%20making.%3C/p%3E%3Cp%3EHomemade%20soft%20pretzels%20have%20been%20on%20my%20culinary%20bucket%20list%20for%20as%20long%20as%20I%20can%20remember.%20I%20love%20the%20combination%20of%20salty%20and%20starch,%20and%20pretzels%20warm%20out%20of%20the%20oven%20are%20pretty%20much%20perfect%20food.%20Fluffy%20in%20the%20inside,%20beautifully%20browned,%20and%20freshly%20puffed.%20But%20why%20hadn%E2%80%99t%20I%20made%20them%20if%20I%20liked%20eating%20them%20so%20much?%20Simple.%20I%20thought%20homemade%20pretzels%20either%20had%20to%20be%20prepared%20with%20(food%20safe!)%20lye,%20whatever%20that%20ominously%20is%20in%20food,%20and%20they%20had%20to%20be%20boiled%20(can%20you%20say%20big%20mess%20all%20over%20the%20cook%20top?).%20Much%20to%20my%20delight%20neither%20is%20true.%20Doing%20a%20bit%20of%20quick%20research,%20I%20now%20understood%20how%20Amy%E2%80%99s%20Soft%20Pretzels%20are%20made%20without%20lye.%20Lye%20is%20an%20alkali.%20Baking%20soda%20(mixed%20with%20water)%20is%20an%20alkali.%20Viola!%20Dip%20the%20unbaked%20pretzel%20in%20the%20solution%20and%20the%20%E2%80%9Clye%E2%80%9D%20reacts%20to%20the%20surface%20of%20the%20dough,%20resulting%20in%20the%20pretzel%E2%80%99s%20deep,%20glossy%20brown%20when%20baked%20and%20gives%20the%20pretzel%20its%20crisp%20yet%20slightly%20chewy%20texture.%3C/p%3E%3Cp%3EAs%20a%20note,%20Amy%20makes%20the%20dough%20in%20a%20mixer.%20The%20recipe%20below%20reflects%20the%20changes%20I%20made,%20notably%20using%20the%20food%20processor%20to%20prepare%20the%20dough%20like%20I%20do%20with%20pizza%20dough.%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan,%20combine%20the%20%C2%BD%20cup%20water%20and%202%20tablespoons%20of%20baking%20soda.%20Turn%20the%20heat%20to%20medium-high%20and%20bring%20the%20pot%20to%20a%20simmer.%20Stir%20the%20water%20until%20the%20baking%20soda%20is%20completely%20dissolved.%20Remove%20from%20heat%20and%20set%20aside%20to%20cool.%3C/p%3E%3Cp%3EPlace%20the%201%20cup%20of%20water,%20yeast,%20and%20sugar%20in%20the%20bowl%20of%20a%20food%20processor.%20Mix%20until%20it%20froths%20slightly.%20Add%20the%20salt%20and%20flour%20and%20knead%20for%205%20minutes%20or%20so%20until%20the%20dough%20forms%20a%20ball.%20If%20the%20dough%20is%20too%20sticky,%20add%20more%20flour%20as%20needed.%20Place%20the%20dough%20into%20a%20lightly%20greased%20bowl%20and%20cover%20with%20plastic%20wrap.%20Put%20the%20bowl%20in%20a%20warm%20place%20and%20let%20the%20dough%20rise%20for%20at%20least%2030%20minutes,%20longer%20is%20fine.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20500%20degrees%20F%20and%20spray%20a%20baking%20sheet%20with%20non%20stick%20spray.%3C/p%3E%3Cp%3ETurn%20the%20dough%20out%20onto%20a%20lightly%20floured%20surface%20and%20divide%20into%208%20equal%20parts.%20Let%20the%20dough%20rest,%20lightly%20covered%20for%203%20minutes.%3C/p%3E%3Cp%3EUsing%20your%20hands,%20roll%20each%20section%20of%20the%20dough%20into%20a%20long,%20thin%20rope%20and%20shape%20into%20a%20pretzel.%20Dip%20each%20pretzel%20into%20the%20soda%20wash%20and%20place%20on%20the%20prepared%20baking%20sheets,%20reshaping%20as%20necessary.%20Let%20the%20pretzels%20rest%20for%2010%20minutes.%3C/p%3E%3Cp%3EBake%20the%20pretzels%20for%208-10%20minutes%20(6-7%20minutes%20in%20a%20convection%20oven)%20or%20until%20deeply%20browned.%20Brush%20the%20pretzels%20generously%20with%20melted%20butter%20and%20sprinkle%20with%20salt.%3C/p%3E){kind=link}
