- ½ lb thick-cut bacon or pancetta, diced
- 4 lbs bone-in beef short ribs, cut into 3-4″ lengths
- 1 tsp salt
- 1 tsp fresh ground black pepper
- 1 cup flour
- 3 tbsp olive oil
- 3 large carrots, peeled and cut into 1″ pieces
- 1 large yellow onion, finely diced
- 2 ribs celery, finely diced
- 4 cloves garlic, minced
- 1 bottle (750ml) full-bodied red wine
- 1 can (6 oz.) tomato paste
- 3 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 1 bay leaf
- 1 cup beef stock
