%20leprechauns%20to%20me.%3C/p%3E%3Cp%3EI%20swear%20I%20didn't%20get%20into%20the%20Irish%20Whiskey.%3C/p%3E%3Cp%3EYes,%20we%20eat%20frog%20legs.%20%20No,%20they%20don't%20taste%20like%20chicken.%20%20They%20have%20a%20texture%20similar%20to%20chicken,%20but%20taste%20more%20like%20seafood.%3C/p%3E%3Cp%3EAnyway,%20back%20to%20word%20associations.%20%20If%20you%20were%20to%20pick%20a%20sense%20that%20goes%20with%20the%20word%20food,%20I'm%20guessing%20you'd%20pick%20taste.%3C/p%3E%3Cp%3EOf%20course,%20when%20it%20comes%20to%20food,%20we%20also%20use%20our%20sense%20of%20smell.%3C/p%3E%3Cp%3EOur%20sense%20of%20sight.%3C/p%3E%3Cp%3EAnd%20our%20sense%20of%20touch%20when%20we%20prepare%20it.%3C/p%3E%3Cp%3EI%20recently%20learned%20how%20important%20the%20sense%20of%20hearing%20is%20when%20it%20comes%20to%20food.%20%20I've%20taken%20to%20popping%20in%20some%20earbuds%20and%20listening%20to%20music%20while%20I%20cook.%3C/p%3E%3Cp%3E(I've%20even%20been%20caught%20%22shakin'%20it%22%20in%20the%20kitchen.)%3C/p%3E%3Cp%3EI%20never%20realized%20how%20much%20I%20rely%20on%20hearing%20my%20food%20cook%20to%20tell%20me%20when%20to%20do%20certain%20things.%20%20Often,%20I%20turn%20my%20back%20to%20the%20stove%20to%20wash%20dishes%20or%20start%20getting%20plates%20and%20glasses%20ready.%20%20I%20can%20hear%20when%20the%20food%20starts%20to%20sizzle%20too%20much%20and%20needs%20to%20be%20flipped%20or%20starts%20to%20bubble%20too%20much%20and%20needs%20to%20be%20turned%20down.%3C/p%3E%3Cp%3ESo%20while%20I've%20been%20shakin'%20it%20in%20the%20kitchen%20lately,%20I've%20had%20a%20few%20pots%20bubble%20over%20and%20a%20few%20things%20stick%20to%20the%20bottom%20of%20pans.%3C/p%3E%3Cp%3EI%20was%20careful%20with%20these%20frog%20legs,%20though.%20%20They%20aren't%20cheap%20(unless%20you%20hunt%20them%20yourself)%20and%20they%20are%20one%20of%20my%20son's%20favorite%20things%20to%20eat.%3C/p%3E%3Cp%3EFrog%20legs%20are%20most%20commonly%20eaten%20deep%20fried%20around%20here.%20%20I%20didn't%20feel%20for%20that,%20so%20I%20lightly%20dredged%20them%20in%20flour%20and%20gave%20them%20a%20quick%20pan%20fry.%20%20A%20quick%20and%20easy%20buttery%20garlic%20and%20lemon%20sauce%20went%20over%20the%20top.%20%20Just%20for%20kicks...and%20because%20I'm%20anxiously%20waiting%20for%20the%20price%20of%20crawfish%20to%20come%20down...I%20decided%20to%20serve%20the%20frog%20legs%20over%20Crawfish%20Boil%20Mashed%20Potatoes%20with%20a%20green%20salad%20on%20the%20side.%3C/p%3E%3Cp%3ECut%20the%20frog%20legs%20apart.%20%20Mix%20milk%20with%20hot%20sauce%20in%20a%20bowl.%20%20Add%20frog%20legs%20and%20soak%20in%20refrigerator%20for%2030-40%20minutes.%3C/p%3E%3Cp%3EHeat%20oven%20to%20250%20F.%3C/p%3E%3Cp%3EMix%20the%20flour,%20salt,%20and%20pepper%20together%20in%20a%20shallow%20dish.%20%20Add%20half%20of%20the%20butter%20and%20all%20of%20the%20olive%20oil%20to%20a%20large%20skillet%20and%20heat%20over%20medium.%20%20Once%20the%20butter%20is%20foamy,%20remove%20frog%20legs%20from%20the%20milk,%20letting%20excess%20drip%20off.%20%20Dredge%20in%20flour.%20%20Shake%20off%20excess%20and%20place%20in%20hot%20pan.%20%20Cook%20until%20golden%20brown,%20turn,%20and%20cook%20on%20second%20side%20until%20deep%20golden%20brown.%20%20Place%20frog%20legs%20on%20a%20baking%20pan%20and%20keep%20warm%20in%20the%20oven.%3C/p%3E%3Cp%3EMelt%20remaining%20butter%20in%20the%20skillet.%20%20Add%20garlic%20and%20saute%20for%20about%20a%20minute.%20%20Squeeze%20in%20lemon%20juice%20and%20season%20with%20salt%20and%20pepper.%20%20Serve%20over%20frog%20legs%20immediately.%20%20Garnish%20with%20chives%20or%20green%20onions.%3C/p%3E%3Cp%3EServes%203-4%3C/p%3E%3Cp%3ECrawfish%20Boil%20Mashed%20Potatoes%3C/p%3E%3Cp%3E2%201/2%20lbs%20small%20red%20potatoes,%20cut%20in%20half%3C/p%3E%3Cp%3E1/2%20cup%20concentrated%20Crawfish,%20Crab,%20and%20Shrimp%20Boil%3C/p%3E%3Cp%3E1/2%20TBSP%20crushed%20red%20pepper%3C/p%3E%3Cp%3E1/2%20TBSP%20salt%3C/p%3E%3Cp%3E1/2-3/4%20cup%20milk%3C/p%3E%3Cp%3E2%20TBSP%20butter%3C/p%3E%3Cp%3Esalt%20and%20pepper,%20to%20taste%20(if%20needed)%3C/p%3E%3Cp%3EAdd%20potatoes%20to%20a%20large%20pot.%20%20Pour%20in%20concentrated%20Crawfish,%20Crab,%20and%20Shrimp%20Boil.%20%20Add%20red%20pepper%20and%20salt.%20%20Add%20water%20to%20cover%20potatoes%20by%20about%201%22.%20%20Bring%20to%20a%20boil,%20lower%20to%20a%20simmer%20and%20cook%20until%20a%20sharp%20knife%20will%20pierce%20through%20the%20potatoes.%20%20Drain,%20reserving%201/2%20cup%20liquid.%3C/p%3E%3Cp%3EReturn%20potatoes%20to%20the%20pot%20and%20add%20the%20reserved%20liquid.%20%20Add%201/2%20cup%20milk%20and%20the%20butter.%20%20Mash%20together%20with%20a%20potato%20masher,%20adding%20more%20milk%20if%20needed.%20%20Season%20with%20salt%20and%20pepper%20if%20needed.%3C/p%3E%3Cp%3EServes%204-6%3C/p%3E%3Cp%3ENeed%20more%20SEAFOOD?%3C/p%3E%3Cp%3EFrom%20the%20past...%3C/p%3E%3Cp%3ELinking%20with:%3C/p%3E){kind=link}
