Receta Sesame Potato Latkes

- Peel potatoes and mash till smooth. Add in garlic, 1 Tbsp. oil, chives and bread crumbs.
- Season to taste with salt and pepper. Mix well. Shape into thin latkes, using about 2 Tbsp. batter per latke. Pour about 1/3 c. sesame seeds onto flat plate and press both sides of latkes into seeds to coat.
- In large, heavy skillet, heat 1/4 inch oil to 375 degrees.
- Carefully plate latkes in warm oil and fry on both sides till golden, about 2 to 3 min per side.
- Drain on paper towels. Serve immediately with Caramelized Applesauce. Yields 2 to 3 dozen latkes.
