%20is%20a%20rich%20bread%20pudding%20spiced%20with%20cardamom.%20Bread%20pieces%20are%20deep%20fried%20in%20ghee/clarified%20butter%20and%20then%20served%20dipped%20in%20thick%20creamy%20rich%20milk%20cream%20or%20Rabri.%20Its%20is%20a%20gourmets%20delight%20but%20a%20weight%20watchers%20nightmare.%20I%20have%20gone%20for%20a%20low%20fat%20recipe%20where%20in%20I%20have%20shallow%20fried%20the%20bread%20pieces%20and%20made%20a%20low%20fat%20cashew%20rabri.%20I%20have%20used%20Nita%20Mehta's%20Shahi%20tukre%20recipe%20from%20her%20book,%20Perfect%20Vegetarian%20Cookery%20where%20she%20has%20gone%20for%20the%20traditional%20recipe%20-%20deep%20fry%20bread%20in%20%20ghee,soak%20in%20creamy%20thick%20rabri.%20I%20had%20barely%204%20slices%20of%20bread%20and%20so%20I%20had%20gone%20for%20minimum%20quantity%20of%20ingredients.%20The%20dish%20originally%20belongs%20to%20Mughlai%20cuisine%20and%20is%20also%20a%20regular%20in%20the%20Pakisthani%20cuisine.%20Double%20ka%20Meetha%20is%20a%20similar%20pudding%20found%20in%20Hyderabadi%20cuisine.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EBread%20Slices:%20atleast%204%20which%20have%20been%20cut%20into%20rounds%20using%20a%20cookie%20cutter.%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3EUsing%20a%20cookie%20cutter%20cut%20rounded%20pieces%20from%20the%20bread.%20Traditionally%20you%20diagonally%20cut%20the%20bread%20slice%20into%20two%20triangles.I%20had%20ragi%20walnut%20bread%20which%20I%20have%20used%20here.%3C/p%3E%3Cp%3EHeat%20ghee%20in%20a%20shallowfry%20pan,allow%20it%20to%20spread,then%20shallow%20fry%20or%20toast%20the%20bread%20in%20this%20ghee,adding%20little%20sugar%20(to%20get%20%20the%20brown%20colour)%20and%20also%20little%20milk%20(to%20make%20it%20a%20bit%20soft)%20on%20each%20side.%20Turn%20and%20toast%20the%20other%20side%20lightly%20as%20well.%20The%20bread%20should%20not%20be%20too%20crispy%20or%20soggy.%20If%20too%20crispy%20or%20dry%20then%20soak%20it%20in%20little%20milk%20for%20a%20few%20seconds%20and%20keep%20aside.%3C/p%3E%3Cp%3ERabri:%3C/p%3E%3Cp%3EIn%20a%20thick%20bottomed%20pan,bring%20to%20boil%20half%20cup%20of%20milk%20to%20which%20sugar,saffron%20and%20cardamom%20has%20been%20added.%20Reduce%20and%20let%20it%20simmer%20for%20few%20minutes.%20Meanwhile,%20mix%20together%20the%20powdered%20cashew%20and%20arrowroot%20n%20the%20remaining%20two%20tbsp%20of%20milk%20and%20add%20it%20to%20the%20simmering%20milk.%20Stir%20well%20with%20a%20spoon%20and%20let%20it%20cook%20for%20a%20few%20more%20minutes%20until%20it%20starts%20thickening%20into%20a%20pale%20yellow(due%20to%20saffron)%20liquid.%20The%20consistency%20should%20be%20like%20that%20of%20condensed%20milk.%20Mine%20took%20barely%207%20minutes,but%20will%20be%20more%20for%20higher%20quantities%20of%20milk.%20Remove%20from%20heat%20and%20keep%20aside.%3C/p%3E%3Cp%3EShahi%20Tukre:%3C/p%3E%3Cp%3ETraditionally,fried%20bread%20slices(rounds/triangles)%20are%20arranged%20in%20a%20plate%20and%20the%20rabri%20is%20poured%20over%20it.%20It%20is%20then%20topped%20with%20chopped%20nuts%20and%20silver%20paper.%3C/p%3E%3Cp%3EHere%20I%20have%20gone%20for%20a%20fruity%20and%20layered%20version.%20I%20spread%20little%20rabri%20in%20a%20serving%20plate,kept%20a%20bread%20slice,topped%20it%20with%20chopped%20nuts%20and%20sliced%20strawberries,topped%20it%20with%20another%20bread%20slice%20followed%20by%20nuts,%20poured%20the%20rabri%20on%20top%20of%20it%20and%20then%20topped%20with%20sliced%20berries.%20I%20went%20for%20strawberries%20as%20they%20add%20more%20colour%20to%20the%20dish.%20You%20can%20go%20for%20mango/pineapple%20or%20any%20choice%20of%20fruits.%3C/p%3E%3Cp%3EThe%20rich%20shahi%20tukre%20are%20made%20more%20healthy%20and%20colourful%20and%20overall%20more%20appealing.You%20can%20make%20your%20own%20choice%20while%20plating.%20You%20can%20also%20serve%20the%20bread%20pieces%20with%20little%20rabri%20on%20top%20and%20serve%20additional%20rabri%20in%20a%20bowl.%20Simple,delectable%20and%20perfect%20dessert.%3C/p%3E%3Cp%3EI%20had%20arrowroot%20powder%20with%20me%20which%20I%20used%20as%20a%20thickener.%20Normally%20you%20add%20khoya/mawa/%20thick%20solidified%20milk%20to%20the%20regular%20milk%20while%20making%20rabri.%20I%20have%20used%20the%20nuts%20for%20richness%20and%20thickening%20along%20with%20%20arrowroot.You%20can%20go%20for%20the%20regular%20corn%20flour%20paste%20or%20even%20use%20bread%20crumbs%20for%20thickening.%3C/p%3E%3Cp%3EI%20had%20cashew%20nuts%20in%20my%20freezer%20a%20few%20tbsp%20of%20which%20I%20pulsed%20to%20a%20powder%20in%20a%20blender.%20Go%20for%20short%20bursts%20for%20this%20else%20the%20cashewnuts%20may%20release%20the%20fat/oil%20and%20may%20become%20a%20paste%20than%20powder.%3C/p%3E%3Cp%3EThe%20healthy%20bread%20pudding%20is%20also%20going%20to%20AWED:Indian%20at%20Taste%20of%20Pearl%20City,%20an%20event%20by%20DK.%3C/p%3E){kind=link}
