%3C/p%3E%3Cp%3EThis%20is%20a%20recipe%20I%20had%20noticed%20in%20the%20Yotam%20Ottolenghi%20Cookbook,%20Plenty,%20quite%20a%20while%20ago.%20%20%20%20I%20had%20cooked%20some%20eggs%20in%20a%20delicious%20tomato%20sauce%20before.%20%20%20(Pan%20Roasted%20Eggs%20and%20Tomatoes.)%20%20They%20were%20really%20good%20%20.%20.%20.%20%20this%20recipe%20was%20different%20however%20.%20.%20.%20%20there%20were%20onions,%20peppers%20and%20some%20different%20herbs%20and%20things%20in%20it.%3C/p%3E%3Cp%3EIt%20sounded%20simple%20and%20delicious.%20%20It's%20a%20North%20African%20dish%20apparently%20.%20.%20.%20%20but%20it's%20quite%20similar%20to%20the%20way%20that%20the%20Turkish%20cook%20eggs,%20but%20again%20with%20different%20herbs%20and%20spices.%20%20The%20Turks%20use%20peppers%20and%20tomatoes%20as%20well.%20%20%20The%20Italians%20also%20cook%20a%20similar%20dish,%20using%20just%20tomatoes,%20garlic%20and%20basil.%20%20(No%20surprise%20there!)%3C/p%3E%3Cp%3EI%20changed%20the%20recipe%20ever%20so%20slightly%20to%20adapt%20it%20to%20what%20I%20actually%20had%20in%20the%20house%20.%20.%20.%20using%20a%20green%20pepper%20instead%20of%20a%20yellow%20pepper.%20%20I%20also%20used%20dried%20coriander%20as%20I%20didn't%20have%20any%20fresh%20(that's%20parsley%20you%20see%20here.)%20and%20I%20added%20a%20splash%20of%20dry%20white%20wine.%20%20Oh%20yes%20.%20.%20.%20%20I%20also%20used%20a%20good%20quality%20tin%20of%20tomatoes%20(Cirio,%20they%20are%20my%20favourite)%20instead%20of%20fresh%20.%20.%20.%20%20because%20to%20be%20honest%20.%20.%20.%20fresh%20tomatoes%20are%20just%20not%20that%20good%20at%20this%20time%20of%20year,%20and%20tinned%20tomatoes%20always%20are.%3C/p%3E%3Cp%3EI%20also%20cut%20the%20recipe%20in%20half,%20%20because%20there%20are%20only%20two%20of%20us.%20%20I%20also%20didn't%20cook%20two%20eggs%20a%20piece%20.%20.%20.%20%20we%20would%20never%20have%20been%20able%20to%20eat%20two%20eggs%20a%20piece.%20%20One%20each%20suited%20us%20just%20fine.%20%20All%20in%20all,%20we%20both%20really%20enjoyed%20this%20very%20much.%20%20The%20vegetable%20sauce%20was%20so%20flavourful%20and%20went%20very%20well%20with%20the%20eggs.%20%20Todd%20had%20his%20with%20buttered%20crusty%20bread%20.%20.%20.%20%20I%20had%20mine%20with%20hot%20buttered%20toast.%20%20%20Toast%20and%20eggs%20are%20just%20what%20I%20am%20used%20to%20.%20.%20.%20I%20have%20some%20leftover%20sauce%20which%20I%20think%20I%20will%20use%20on%20a%20pizza%20tomorrow.%20%20%20Sounds%20like%20a%20plan!%3C/p%3E%3Cp%3E*Shakshuka*%3C/p%3E%3Cp%3EServes%204%20with%20abundance%3C/p%3E%3Cp%3EA%3C/p%3E%3Cp%3Edelicious%20North%20African%20dish%20which%20makes%20use%20of%20common%20ingredients,%20put%3C/p%3E%3Cp%3Etogether%20in%20a%20really%20tasty%20way.%20%20Serve%20it%20hot%20with%20some%20crusty%20bread%3C/p%3E%3Cp%3Efor%20dipping.%3C/p%3E%3Cp%3Eadjust%20the%20seasoning%20as%20required.%20%20Remove%20the%20bay%20leaves%20and%20discard.%3C/p%3E%3Cp%3EMake%20some%20hollows%20in%20the%20mix%20and%20crack%20in%20the%20eggs.%20%20%20Sprinkle%20with%3C/p%3E%3Cp%3Esalt%20and%20pepper%20and%20cover%20with%20a%20lid.%20%20%20Cook%20on%20a%20very%20gentle%20heat%20for%3C/p%3E%3Cp%3E10%20to%2012%20minutes,%20or%20until%20the%20eggs%20are%20just%20set.%20%20Sprinkle%20with%20more%3C/p%3E%3Cp%3Echopped%20coriander%20and%20serve.%3C/p%3E){kind=link}
