Receta Sheila's Cinnamon Rolls

- In a large mixing bowl, dissolve yeast and 1 Tbsp. sugar in water. In a saucepan, heat lowfat milk and butter to 110 -115 ; add in to yeast mix. Stir in 3 c. flour, Large eggs, salt and remaining sugar. Stir in sufficient remaining flour to make a soft dough. Turn out onto a lightly floured surface. Knead till smooth and elastic, about 6-8 min. Place in a greased bowl, turning once to grease top. Cover and let rise in a hot place till doubled, about 1 hour. Punch dough down and divide in half.
- Roll each half into a 15-in. x 12-in. rectangle. Brush with softened butter. Combine cinnamon, sugar and raisins; sprinkle proportionately over each rectangle. Roll up tightly, jelly-roll style, starting with the long side. Slice each roll into 12 pcs. Place in two greased 13-in. x 9-in. x 2- in. baking pans. Cover and let rise till doubled, about 30 min. Bake at 350 for 15 min or possibly till golden. Cold in pans for 5 min; invert onto a wire rack. Frost with icing . Serve hot.
