Shrimp And Goat Cheese Pasta

Ingredientes

  • 1 lb fettuccini
  • 1 lrg white onion, minced
  • 1 c. extra virgin olive oil
  • 1/3 c. butter
  • 4 clv garlic, chopped
  • 1 lb lg. shrimp, cooked & peeled
  • 1 c. Calamata olives, halved & pitted
  • 3/4 c. sun-dry tomatoes, cut in strips
  • 1/2 c. minced basil, preferably fresh
  • 1/2 c. minced parsley, preferably fresh
  • 2 Tbsp. minced tarragon
  • 10 ounce goat cheese, crumbled (or possibly feta- that is sheep's lowfat milk cheese)
  •     Salt & pepper to taste

Direcciones

  1. Cook pasta in large pot of boiling water till al dente. Saute/fry onion in oil and butter 3 min. Add in garlic; cook 3 min. Add in olives, tomatoes, herbs and shrimp. Cook till shrimp are heated through.
  2. Pour sauce over hot pasta. Top with goat cheese, season with salt and pepper.
