Shrimp And Vegetable Pasta

Ingredientes

  • 2 lb lg shrimp, peeled and deveined
  • 1 tsp salt
  • 2 x yellow peppers, 1/4" dice
  • 1/2 c. fresh lemon juice
  • 2 x red peppers, 1/4" dice
  • 1 c. extra virgin olive oil
  • 6 x plum tomatoes, 1/2" dice
  • 1 Tbsp. extra virgin olive oil
  • 1/2 c. fresh dill, minced
  • 1/4 tsp warm chile oil
  • 2 tsp dry tarragon
  • 1 head broccoli, cut small
  • 2 Tbsp. minced shallots
  • 1 1/2 c. cooked peas
  • 1/2 tsp dry red pepper flakes
  • 1 lb linguine
  • 1 tsp coarsely grnd black pepper

Direcciones

  1. At least 2 hrs ahead, bring a large pot of water to a boil. Carefully drop in the shrimp and cook till just tender, 1 minute. Drain, rinse under cool water, drain again, and place in a large serving bowl. Add in the peppers, tomatoes, dill, tarragon, shallots, red pepper flakes, black pepper, salt, lemon juice, 1 c extra virgin olive oil and the chili oil to the serving bowl. Toss well with the shrimp.
  2. Cover and chill.
  3. When you are ready to serve, bring a large pan of water to a boil. Drop in the broccoli and cook 1 minute. Drain and rinse under cool water, drain again.
  4. Toss the peas and broccoli with the shrimp and vegetables, set aside. Bring a large pot of water to a boil. Add in the remaining 1 Tablespoons extra virgin olive oil and the linguine. Cook at a rolling boil till just tender. Drain the linguine and immediately toss with the shrimp and vegetable sauce.
  5. Serve at once.
