Ingredientes

  • 2 c. cooked brown rice
  • 1 1/2 c. bean sprouts
  • 1/3 c. diagonally sliced green onions
  • 1 lb cooked peeled medium shrimp
  • 15 1/2 ounce chickpeas -- liquid removed
  • 6 ounce frzn snow peas -- thawed
  • 1/4 c. rice vinegar
  • 1 Tbsp. low-sodium soy sauce
  • 1 Tbsp. dark sesame oil
  • 2 tsp water
  • 1 1/2 tsp grated peeled fresh ginger
  • 1/2 tsp brown sugar
  • 1/4 tsp pepper
  •     minced fresh cilantro -- optional

Direcciones

  1. Combine first 6 ingredients in a large bowl: toss well.
  2. Combine vinegar and next 6 ingredients (vinegar through pepper)
  3. in a bowl; stir well with a whisk. Pour over rice mix; toss well. Cover and chill. Garnish with cilantro, if you like.
  4. Yield: 6 (1 1/3 c.) servings.
