Receta Shrimp. Brown Rice, And Chickpea Salad

Ingredientes
- 2 c. cooked brown rice
- 1Â 1/2 c. bean sprouts
- 1/3 c. diagonally sliced green onions
- 1 lb cooked peeled medium shrimp
- 15Â 1/2 ounce chickpeas -- liquid removed
- 6 ounce frzn snow peas -- thawed
- 1/4 c. rice vinegar
- 1 Tbsp. low-sodium soy sauce
- 1 Tbsp. dark sesame oil
- 2 tsp water
- 1Â 1/2 tsp grated peeled fresh ginger
- 1/2 tsp brown sugar
- 1/4 tsp pepper
- Â Â minced fresh cilantro -- optional
Direcciones
- 1. Combine first 6 ingredients in a large bowl: toss well.
- Combine vinegar and next 6 ingredients (vinegar through pepper)
- in a bowl; stir well with a whisk. Pour over rice mix; toss well. Cover and chill. Garnish with cilantro, if you like.
- Yield: 6 (1 1/3 c.) servings.
