Shrimp Croquettes

Ingredientes

  • 3/4 pound frzn cooked shelled shrimp
  • 3 T Crisco
  • 1/3 c. flour
  • 1/2 c. lowfat milk
  • 2 T finely minced onion
  • 1 T snipped parsley
  • Dash pepper & paprika
  • 2 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 3/4 c. fine dry bread crumbs
  • 1 egg, beaten
  • 2 T water
  • 1 pkg. (8 ounce) frzn peas with cream sauce

Direcciones

  1. Defrost shrimp, devein if necessary. Chop finely (about 2 cups). Heat 3 tbsp Crisco. Blend in flour. Add in lowfat milk. Cook and stir over medium heat till very thick and smooth; remove from heat. Add in onion, parsley, lemon juice and seasonings; stir in shrimp.Preheat Crisco for deep frying to 350 degrees. Shape shrimp mix into 8 cones. Roll in crumbs. Put together egg with water. Dip cones in egg mix roll in crumb again. Deep fry a couple at a time till brown and hot about 3 min. Turn if necessary. Drain on paper towel. Keep croquettes hot.
  2. Prepare peas according to directions on package. Spoon creamed peas over croquettes. Makes 4 servings.
  3. Note: 2 cans (6 1/2 to 7 oz) tuna, liquid removed and flaked. May be used in place of the cooked shrimp.
