.%3C/p%3E%3Cp%3ESan%20Franciscans%20recognize%20only%20a%20few%20particular%20ingredients%20when%20it%20comes%20to%20Crab%20Louie:%20crab%20meat,%20tomato,%20asparagus,%20and%20hard%20boiled%20eggs.%20It%20should%20be%20served%20on%20a%20bed%20of%20iceberg%20lettuce%20with%20a%20Louie%20dressing%20of%20mayonnaise%20and%20chili%20sauce%20on%20the%20side%20(always%20on%20the%20side).%20Other%20ingredients%20such%20as%20pickles,%20olives%20and%20green%20onions%20have%20made%20it%20onto%20the%20plate%20in%20some%20recipes%20I%E2%80%99ve%20seen.%20But%20I%E2%80%99ve%20also%20seen%20quite%20a%20few%20Golden-Gaters%20raise%20their%20eyebrows%20at%20these%20accoutrements,%20so%20it%E2%80%99s%20hard%20to%20know%20what%20to%20think.%3C/p%3E%3Cp%3EShrimp%20Louie%3C/p%3E%3Cp%3ELooking%20at%20my%20recipe%20it%E2%80%99s%20easy%20to%20see%20just%20how%20many%20rules%20I%E2%80%99ve%20broken.%20So%20in%20deference%20to%20the%20original,%20I%E2%80%99m%20going%20to%20call%20this%20Crabless%20Shrimp%20%E2%80%9CLouie%E2%80%9D%20an%20L.A.%20Louie.%20I%20think%20the%20avocado%20makes%20it%20particularly%20Southern%20Californian.%20I%E2%80%99ve%20also%20used%20Sriracha%20sauce%20in%20the%20dressing.%20Most%20recipes%20for%20the%20Northern%20Californian%20Louies%20I%E2%80%99ve%20seen%20require%20some%20sort%20of%20hot%20sauce%20to%20be%20mixed%20in%20the%20mayonnaise.%20They%20don%E2%80%99t%20necessarily%20specify%20what%20kind%20of%20hot%20sauce,%20but%20L.A.%20claims%20Sriracha%20as%20a%20hometown%20hero%20so%20it%20seems%20an%20appropriate%20addition%20to%20this%20L.A.%20Louie.%20You%E2%80%99ll%20also%20notice%20that%20despite%20all%20the%20raised%20eyebrows%20on%20Market%20Street,%20I%20used%20pickles%20in%20my%20Shrimp%20Louie.%3C/p%3E%3Cp%3EOh,%20it%20gets%20even%20stranger.%20I%E2%80%99ve%20replaced%20the%20hard-boiled%20eggs%20with%20ruby%20red%20grapefruit.%20Which%20I%20suppose%20leaves%20open%20the%20argument%20that%20this%20%E2%80%9CLouie%E2%80%9D%20is%20a%20Texas%20Louie.%20But%20I%20find%20that%20argument%20ridiculous.%20I%20live%20in%20Los%20Angeles.%20This%20Shrimp%20Louie%20is%20therefore%20obviously%20an%20L.A.%20Louie.%20GREG%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3ECut%20the%20cucumber%20into%20%C2%BC-inch%20dice.%20Place%20the%20dice%20into%20a%20wire-mesh%20sieve.%20Sprinkle%20the%20cucumber%20with%20with%202%20teaspoons%20salt.%20Set%20aside%20for%2030%20minute,%20shaking%20the%20sieve%20occasionally,%20to%20drain%20the%20water%20our%20of%20the%20cucumber.%3C/p%3E%3Cp%3EIn%20the%20meantime,%20combine%20vinegar,%20water%20and%20sugar%20in%20a%20small%20non-reactive%20saucepan.%20Bring%20the%20mixture%20to%20a%20boil.%20When%20the%20sugar%20is%20dissolved%20remove%20the%20pan%20from%20the%20heat%20and%20set%20aside%20to%20cool%20completely.%3C/p%3E%3Cp%3EOnce%20cool%20place%20the%20salted,%20drained%20cucumbers%20into%20the%20cooled%20vinegar%20mixture.%20Set%20aside%20while%20you%20prepare%20the%20Sriracha%20sauce%20and%20shrimp%20salad.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl%20combine%20mayonnaise,%20Sriracha,%20sesame%20oil,%20lime%20juice,%20and%20mint.%20Use%20a%20fork%20to%20blend%20the%20mixture%20very%20well.%20Drain%20the%20cucumbers%20and%20add%20them%20to%20the%20mayo%20mixture,%20followed%20by%20the%20shrimp.%20Gently%20fold%20to%20combine.%20The%20shrimp%20salad%20may%20be%20made%20and%20refrigerated%20up%20to%204%20hours%20ahead.%3C/p%3E%3Cp%3EServe%20the%20shrimp%20salad%20inside%20avocado%20halves.%20Garnish%20with%20grapefruit%20segments%20and%20whole%20mint%20leaves.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3EShare%3C/p%3E){kind=link}
