%20I%20was%20ready%20to%20tackle%20a%20slew%20of%20new%20healthy%20recipes%20that%20I%20had%20begun%20collecting%20that%20all%20require%20the%20snazzy%20tool.%20On%20the%20top%20of%20my%20%22healthy%20recipes%20to%20make%22%20list?%20Shrimp%20&%20Vegetable%20Summer%20Rolls,%20light%20and%20fresh%20rice%20paper%20rolls%20filled%20with%20crisp%20julienned%20vegetables%20and%20jam%20packed%20with%20some%20of%20my%20favourite%20fresh%20herbs.%20Unlike%20deep%20fried%20spring%20rolls,%20summer%20rolls%20require%20no%20cooking%20at%20all,%20just%20a%20simple%20dip%20in%20warm%20water%20and%20the%20firm%20rice%20paper%20sheets%20turn%20malleable,%20and%20ready%20to%20fill%20with%20whatever%20filling%20you%20so%20choose.%3C/p%3E%3Cp%3EDying%20to%20try%20out%20my%20new%20tool,%20I%20used%20carrots%20and%20cucumber%20as%20my%20initial%20inspiration%20to%20create%20this%20recipe.%20After%20picking%20up%20the%20veggies,%20all%20it%20took%20was%20a%20short%20stroll%20around%20my%20new%20favourite%20shopping%20ground,%20St.%20Lawrence%20market,%20to%20finalize%20the%20ingredients%20in%20the%20recipe.%20Wanting%20a%20big%20hit%20of%20freshness%20in%20every%20bite,%20I%20picked%20up%20some%20of%20my%20favourite%20fresh%20herbs,%20basil,%20cilantro,%20and%20mint.%20For%20a%20bit%20of%20crunch%20and%20substance,%20I%20chose%20kelp%20noodles%20as%20opposed%20to%20the%20more%20common%20rice%20noodles%20as%20a%20healthy%20alternative.%20I%20had%20first%20tried%20kelp%20noodles%20in%20the%20raw%20and%20vegan%20pad%20thai%20from%20Rawlicious,%20and%20was%20incredibly%20impressed%20by%20their%20interesting%20texture%20that%20gives%20you%20the%20same%20satisfied%20feeling%20after%20eating%20pasta%20noodles.%20%20Also%20known%20as%20%22sea%20tangle%22,%20kelp%20noodles%20require%20zero%20cooking%20and%20are%20made%20from%20kelp,%20an%20edible%20seaweed%20that%20is%20very%20low%20in%20calories.%20To%20contrast%20the%20crisp%20texture%20from%20the%20noodles%20and%20veggies,%20I%20wanted%20to%20add%20something%20creamy%20to%20my%20rolls.%20Creamy%20avocado,%20full%20of%20healthy%20fats,%20was%20an%20absolute%20no-brainer.%20Being%20on%20a%20bit%20of%20a%20seafood%20kick,%20I%20couldn't%20resist%20adding%20in%20some%20shrimp%20that%20I%20quickly%20thawed%20from%20the%20freezer.%20Picking%20the%20ingredients%20is%20of%20course%20the%20easy%20part,%20then%20came%20the%20production.%3C/p%3E%3Cp%3EIn%20a%20matter%20of%20seconds%20I%20learned%20that%20my%20julienne%20peeler,%20the%20tool%20that%20inspired%20the%20whole%20recipe,%20was%20absolute%20garbage.%20The%20darned%20thing%20didn't%20want%20to%20slice%20anything%20but%20my%20thumb.%20I%20tried%20to%20prevail,%20attempting%20different%20techniques,%20and%20holding%20the%20carrots%20in%20different%20ways,%20but%20quite%20frankly,%20the%20peeler%20is%20just%20plain%20dangerous.%20A%20frustrated%20toss%20into%20the%20sink,%20and%20I%20had%20resorted%20back%20to%20my%20mandolin.%20You%20will%20notice%20that%20I%20don't%20list%20how%20much%20of%20each%20ingredient%20to%20put%20into%20each%20roll,%20this%20is%20because%20it's%20really%20up%20to%20you%20and%20what%20flavours%20and%20textures%20you%20want%20to%20stand%20out%20most,%20and%20how%20much%20you%20are%20able%20to%20comfortably%20wrap%20into%20the%20rolls.%20My%20first%20roll%20was%20a%20messy%20disaster,%20with%20the%20thin%20rice%20paper%20tearing,%20the%20filling%20bursting%20out%20all%20over%20my%20kitchen%20floor,%20while%20I%20quickly%20(and%20very%20unattractively,%20might%20I%20add)%20tried%20to%20catch%20whatever%20of%20the%20rice%20paper%20roll%20remained%20into%20my%20eager%20mouth.%20Although%20it%20seemed%20like%20a%20total%20waste%20at%20first,%20this%20initial%20mess%20of%20a%20roll%20actually%20helped%20me%20to%20quickly%20learn%20what%20I%20needed%20to%20adjust%20in%20the%20recipe.%20Another%20layer%20of%20rice%20paper,%20a%20little%20less%20kelp%20noodles%20and%20veggies,%20and%20a%20lot%20more%20herbs%20and%20I%20had%20the%20perfect%20balance%20of%20flavours%20and%20textures,%20as%20well%20as%20a%20perfect%20healthy%20snack!%20I%20was%20so%20incredibly%20happy%20with%20how%20my%20summer%20rolls%20turned%20out,%20sending%20off%20a%20care%20package%20of%20them%20to%20my%20mom,%20my%20sister,%20and%20my%20boyfriend,%20knowing%20that%20they%20would%20all%20love%20them%20just%20as%20much%20as%20I.%20I%20am%20happy%20to%20report%20that%20they%20did%20indeed%20share%20the%20love%20for%20the%20rolls,%20sending%20me%20many%20praises%20on%20my%20delicious%20work.%20I%20am%20looking%20forward%20to%20making%20these%20rolls%20as%20a%20refreshing%20snack%20all%20through%20the%20hot%20summer%20months!%3C/p%3E%3Cp%3E*I%20like%20to%20use%20VH%20Spicy%20Thai%20Chili%20sauce%20to%20dip%20my%20summer%20rolls%20into%3C/p%3E%3Cp%3ETip:%20Make%20this%20recipe%20vegan%20by%20omitting%20the%20shrimp!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E20%20rice%20paper%20sheets%20(22cm%20in%20diameter)%3C/p%3E%3Cp%3Ea%20large%20handful%20mixed%20greens%3C/p%3E%3Cp%3Edipping%20sauce%20of%20your%20choice*%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EFill%20a%20medium-large%20bowl%20with%20warm%20water,%20lay%20down%20a%20clean%20dry%20towel%20on%20your%20work%20surface,%20and%20set%20up%20all%20ingredients%20in%20a%20production%20line.%3C/p%3E%3Cp%3EDip%20one%20rice%20paper%20sheet%20into%20the%20warm%20water%20for%20about%205-seconds,%20or%20until%20malleable.%20Lay%20flat%20on%20the%20towel,%20and%20lightly%20dab%20dry%20with%20another%20clean%20towel.%20Dip%20a%20second%20rice%20paper%20sheet%20in%20the%20warm%20water%20until%20softened,%20and%20lay%20directly%20on%20top%20of%20the%20first%20sheet.%20Dap%20to%20dry.%3C/p%3E%3Cp%3EStarting%20with%20the%20mixed%20greens,%20lay%20a%20small%20amount%20of%20each%20filling%20ingredient%20onto%20the%20roll,%20adding%201%20shrimp%20to%20each%20roll,%20about%203/4%20of%20the%20way%20up%20the%20roll.%20For%20the%20best%20flavour%20add%20lots%20of%20the%20fresh%20herbs,%20adding%20slightly%20less%20basil%20than%20the%20cilantro%20and%20mint.%20Gently%20fold%20the%20top%20lip%20of%20the%20rice%20paper%20over%20the%20filling,%20and%20fold%20the%20two%20sides%20in.%20Gently%20roll%20the%20rice%20paper%20to%20create%20a%20package%20with%20the%20filling%20inside.%20Taste.%20Repeat%20with%20the%20remaining%20ingredients.%20You%20should%20be%20left%20with%2010%20rolls%20(minus%20the%20sacrificial%20first%20taste-testing%20roll).%3C/p%3E%3Cp%3EChill%20until%20ready%20to%20serve%20with%20your%20choice%20of%20dipping%20sauce.%20Serve%20within%20the%20first%2024-hours%20of%20making.%3C/p%3E%3Cp%3EListening%20To:%3C/p%3E%3Cp%3EDear%20Landlord,%20I%20want%20to%20ride%20my%20bicycle...%3C/p%3E){kind=link}
