- 1/3 cup finely chopped yellow onion
- 1/3 cup finely chopped celery
- ½ cup finely chopped cauliflower stem
- 1 garlic clove, minced
- 1 cup Arborio rice
- ½ cup dry vermouth or white wine
- 1 cup finely grated parmesan cheese
- ¼ cup finely chopped flat leaf parsley
