%20to%20make...%20just%20a%20little%20time%20and%20forethought!%3C/p%3E%3Cp%3EThese%20salmon%20cakes%20happened%20because%20I%20had%20a%20large%20can%20of%20salmon%20that%20my%20daughter%20opened,%20thinking%20it%20would%20be%20just%20like%20tuna%20and%20that%20she%20could%20make%20some%20%22salmon%20salad%22%20for%20sandwiches.%20She%20took%20one%20look%20inside%20the%20can%20and%20saw%20skin%20and%20bones%20and%20decided%20she%20wanted%20nothing%20to%20do%20with%20it.%20I%20took%20the%20salmon%20out%20of%20the%20can,%20removed%20the%20skin,%20flaked%20it%20a%20bit%20and%20stored%20it%20in%20the%20fridge%20for%20another%20day.%20I%20left%20in%20the%20bones,%20since%20once%20canned,%20they%20are%20soft%20and%20completely%20edible%20and%20are%20a%20great%20source%20of%20calcium!%20The%20skin%20is%20also%20edible,%20but%20a%20bit%20metallic%20in%20flavor,%20so%20I%20removed%20it%20to%20make%20it%20more%20palatable%20for%20my%20kiddos.%20A%20day%20or%20two%20later,%20I%20had%20some%20leftover%20mashed%20potatoes%20from%20dinner...%20and%20I%20knew%20immediately%20that%20these%20lovely%20salmon%20cakes%20would%20be%20our%20lunch%20the%20next%20day.%20I%20didn't%20really%20start%20out%20with%20a%20recipe,%20per%20se.%20Just%20knowing%20what%20I%20had%20on%20hand...%20I%20added%20a%20little%20of%20this%20and%20a%20little%20of%20that%20and%20they%20turned%20out%20super%20delicious!%20I%20ate%20mine%20with%20a%20little%20sauce%20I%20made%20from%20some%20mayo%20and%201000%20Island%20dressing%20and%20the%20kids%20ate%20theirs%20on%20a%20bun%20with%20just%20some%20plain%20mayo.%20We%20liked%20them%20so%20much%20that%20I'm%20quite%20sure%20I'll%20be%20making%20them%20again...%20and%20next%20time%20not%20just%20to%20use%20up%20the%20leftovers%20;)%3C/p%3E%3Cp%3ESimple%20Salmon%20Cakes%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3E1:%20In%20a%20large%20bowl,%20flake%20salmon.%3C/p%3E%3Cp%3E2:%20Add%20mashed%20potato%20to%20salmon%20and%20combine%20well.%3C/p%3E%3Cp%3E3:%20Add%20beaten%20eggs,%20Dijon%20mustard,%20hot%20sauce%20to%20salmon%20mixture.%20Stir%20well.%3C/p%3E%3Cp%3E4:%20Add%20red%20onion,%20garlic%20and%20parsley,%20Old%20Bay%20and%20salt/pepper.%20Stir%20again.%3C/p%3E%3Cp%3E5:%20Chill%20mixture,%20covered%20until%20firm%20(1%20hour%20should%20do%20it.)%3C/p%3E%3Cp%3E6:%20Over%20medium%20flame,%20heat%202-3%20Tablespoons%20of%20olive%20oil%20in%20a%20heavy%20bottomed%20skillet.%3C/p%3E%3Cp%3E7:%20Form%20salmon%20mixture%20into%208-10%20patties%20(using%20wet%20hands%20helps%20keep%20it%20from%20sticking%20to%20you)%3C/p%3E%3Cp%3E8:%20Fry%20patties%20in%20oil%20(do%20not%20crowd%20pan)%205%20minutes,%20flip%20and%20fry%20another%205%20minutes%20on%20the%20other%20side.%3C/p%3E%3Cp%3E9:%20Transfer%20from%20frying%20pan%20to%20a%20paper%20towel%20lined%20plate%20to%20absorb%20excess%20oil.%3C/p%3E%3Cp%3E10:%20Serve%20immediately.%3C/p%3E%3Cp%3EMakes%208-10%20patties%20(4-5%20servings)%3C/p%3E){kind=link}
